Piano Jazz with an ambient focus. Check out Erik Satie, he's a classical composer that made lots of music like this (in fact, he's the creator of ambient music!). I'd also recommend 'Clair de Lune' by Debussy, 'Liebestraum' by Liszt, and if you like extra instruments: check out 'Emily' by Cool Jazz Trio.
