    My mind was about to implode with discouragement from all the other videos of: starting days in advance, feeding and discarding, weighing out grams, knowing hydration percents etc... How did bread making ever survive throughout history without all the modern knowledge and gadgetry? People like you, that's how! Finally a channel for regular folk who just want to make a loaf of simple and delicious bread. Thank you for making it doable!!!!

      I can not agree with you MOOOORE lol, Mary needs a GOLD MEDAL, I can't begin to tell you just hoew relaxed my mind is now I discovered Marys video, I'm 66 and still learning but have just discovered making sourdough starter & now the simple way. How LUCKY we are to have Mary in our lives.

      I used to make and use sourdough on our farm many years ago and I never had to baby it nor throw any early starter away! Heaven forbid. Sourdough is tougher and more forgiving than you are led to believe. Go for it!

    Wow, I thought you had to feed the starter and let it peak each time before you used it. I like your approach to sourdough, "Use it when you need it and you don't have to feed it each time before using it." I am an 80-year-old shut-in and your approach will be so much easier for me. I am making my first sourdough bread today. I used 100% whole-wheat flour. I took my regular two-loaf whole wheat sandwich dough recipe and replaced the yeast with two cups of sourdough starter. I split the dough in half and put each half in bread pans.
    At first, I thought, this experiment isn't working, the dough isn't rising. I took a nap and my gosh, I woke up and those two loaves have risen and are beautiful !!! Thanks to your video, I am going to love this sourdough baking. Thank you sweet lady for helping an old man learn about sourdough baking and how easy the starter will be to maintain.

    Thank you, thank you, thank you!!! It is almost impossible to find the simple sourdough process!!! I'm in my 50's and grew up with sourdough, the simple way. But I didn't pay much attention to it, you know, as kids do. We did exactly how you describe here. I absolutely cannot believe the complication people have made it to be! Sourdough has been around as long as humans, and in the old days no one had time to mess with bread making that took days for one loaf! There was usually 1 baking day per week. And they had no refrigeration or fancy tools. Thank you for keeping it simple!

    I’ve been baking sourdough for 6-7 years. A while back I had a 6 month break. I left just a bit of starter in a jar in the back of the fridge. 6 months later I pulled it out, fed it and off it went (took a few days though). It’s resilient stuff!

    I love this! I am new to sourdough and started with a recipe that did the feed, discard schedule. It wasn't bubbling the way I thought it should, so I decided on day 5 NOT to discard and I added more flour and water than the instructions called for. Poof! Bubbled right up! No more technical mumbo jumbo for me. This video is spot on! Thank you for validating my mindset lol

    My brain has been about to explode with all the "have tos" and the "measuring, weighing, feeding, discarding, etc. I am ready to give up! I am so thankful I found your blog. I am sticking my starter in my fridge right now. I am retired and want to do more home cooking and being self-sufficient but was about to just give up on the sourdough. Thank you!

      You can just expirmwnt. I had just about given up on mine. Stopped feeding it but would mix it just to see what happened and the day I was going to through it away it finally started growing even though it had been days without feeding.

    Thank you! Once I used all my starter I only had about a 1/2 tsp of starter. I panicked for a second. Added my flour and water and it grew. It was amazing. Haven’t let it get that low again 😊

      Just starting. Got a starter from a friend yesterday and am somewhat confused. I put more flour and water in the jar overnight and it grew. Took a quarter cup out and mixed in a new quarter cup and a quarter cup water and it’s in the cupboard. What is the difference between starter and discard? Thank you for your videos!

    Thank you SO much for validating my assumption that maintaining a starter can't be as complicated as others have made it out to be. Like anything else, I feel it just takes time to tweek to ones liking. But in my world, you are the expert because you figured it out and shared. I have discovered the stiff starter will work best for me as I won't bake that often.

    I’ve been at this for about a year. The technical way got me my first successful loaf. I’m branching into
    “eyeballing” for convenience sake. Once you know the feel of success, you can go by feel.The best teacher is the experience of making an attempt.

      My bread looks great, has a moist crumb, great rise… just doesn’t have that sour taste. It tastes like really good bread just not like sourdough. What do you suggest?

      I had the same problem! Until I used the instant pot to control the temperature! 70fto 85 is ideal above 85f it will die, use a themomenter to check the temperature that's really helped me and I've finally had active starter!!

    Hi there, I wanted to pop in to say I finally have a starter!! I did my happy dance. so I used some Kamut and warm water. this was after using some hard white wheat berries. this is day 4 for me so with some hope and a prayer, I might be able to put it in fridge on day five. so happy. I just stuck with it determined this is going to work for me. Kept in in my oven with light on and took temperature it was a stable 84 degrees. 😊 thank you so much for all your input.

    Thank you Mary for making this video. I'm going to make pancakes this morning with my discards using your recipe. I got so confused watching a bunch of videos on sourdough starters and ended up stressed. You calmed me down and now I'm back to hey it's only flour and water. I am anxious to make my first loaf of bread, but I'm only on day 7 of my starter.

    In the beginning I was quite paranoid with feeding times and had a chart, but that stopped after a short while because I did not like to be slave to water and flour :) My starter * Gordon * is now 10 1/2 years old and is going wonderful. He has gone through changes, became a Rye starter, a Wholemeal starter, back to wheat starter... he copes with everything. I dried 100g of my starter and ground it fine, so IF anything should ever happen to my Starter, I can use the dried starter and activated it. I also have yeast water which I use for baking OR when my starter is lazy from fridge time, I feed with yeast water and flour. Yeast water is like a turbo starter for a sourdough starter :)

    Thank goodness someone who doesn’t get all technical about making bread. I’m to busy to baby sourdough all the time, but I do love homemade bread, I’ve been baking bread for years. With your whole wheat dough, molasses makes the bread real good. Love your video!

    I came across your video 3 days ago on how to start your starter. Following your instructions, mine is doing great! I haven't had starter before because I was under the impression it was a daily maintenance.....thank you for clarifying. Can't wait to see in the next couple of weeks how a loaf of bread turns out.       @@TheRoseHomestead I have a question. I'm on day 4 of my starter (pint jar) per your video. Last night it rose and overflowed the jar. With it being so active could I discard, feed and after sitting on table for a while put it in the refrigerator today or should I wait another day? Also, today it has a strong "buttery" smell, is that normal? Thank you in advance.

      @@paulshaw5788 sounds like it's definitely ready to refrigerate. Yes, I would discard some (you can keep the discard in a jar in the fridge to use for another recipe) and feed it. Once it doubles and is active and bubbly move it to the fridge. The smell is different for some as long as it's pleasant and not off putting. Mine usually puts me in theind of yeast or a sweet like aroma.

    If you want to dry your starter to preserve some or give as a gift, just spread active starter between parchment paper , roll it thin and let it dry a couple days. You can activate it in less time than staring new.
    Mix an equal amount of dry starter and flour. Add an equal amount of their combined weight in water.
    Mix them up and wait. It will start bubbling in 24 hrs and be ready to feed soon. Quicker than starting from scratch.

      In the winter, I put it in an airtight container and store in my cool pantry. In the summer, I'll put the container in the fridge.

      I would say on average 2 to 3 weeks to be sure. But, you can try earlier if your starter is consistently doubling in size. Thanks for watching!

    I am working on my 1st Starter. This is day 4. I fed it this morning and it tripled in sizer (10 hours) . Lots of bubbles on the top but none on the sides of the jars. I used Unbleached Organic Flour to start the process. Is it necessary to have a lot of bubbles on the sides of the jar? Thanks for your videos! They are verty helpful. You have removed the fear of starting "Starters."

      I just look for activity. As long as it becomes bubbly and looks "active". I don't mark my jar or anything. Usually within 5 to 6 hours it is really bubbly and I throw it in the fridge. Hope this helps! Thanks so much!

    Hey Mary,on day 7 I fed my starter,it doubled in 5 hours,in the fridge it went,I made pancakes this morning they were delicious. How can I know when it is ready to make my “first” sourdough bread?Thank you very much for your advice.Danny

      It should be ready! If it is doubling in that time frame, it should work fine! It may take a little longer to rise than a more mature starter, but, I would definitely give it a try! Those pancakes are dangerous, ha ha!

      Mary's pancakes are so good, I make them all the time, her biscuits are great. Don't miss out on her drying some starter for a backup in case something happens to your starter. I learned the hard way!
