Adding baking soda- even the smallest amount ever has ruined every savory dish that I’ve snuck it into that wasn’t cake or bread, maybe it’s my tastebuds being sensitive, but I still taste the baking soda and there’s never a way to fix it after. I don’t recommend putting baking soda into things like beans, tomato sauce, caramelized onions, etc.
Oh no.. This hurts me to watch.. You can't rush caramalized onions.. I don't know what this so-called hack is, but that is NOT caramalized onions. You talk about science, but real food science is where the whole method of slowly cooking the onions to caramalize comes from.. This is a BIG NoNo!!!
People have been adding sugar and baking soda to the onions for as long as I have been a chef. So at least 30 years. This is not something that dude invented.

I just want you to get to the point. This is the 3rd video im on trying to find a good instructional video on TH-cam for caramelizing onions. I'm praying to God they're not all like this

Guga foods did an experiment tenderizing meat with bakingsoda and they could also taste it they tried a few methods too

Chop and freeze the onions, this fractures the water cells, and halves the cooking time, thaw then fry in a small amount of butter or lard.

I tried this baking soda rubbish added a tiny amount ...one taste ..threw the lot out !
