I recently got one of these knives from an estate sale for 25$ on the site these knives are about 120$ not including shipping. After seeing this video I got a good deal. I paper tested it's sharpness and it goes through paper like butter.
Love the video! I just bought the same knife! Happy with it, it's beatifull but it isn't razor Sharp. I didn't quite get it, did you sharpen it? What do I need to sharpen it? What do you use??
Absolutely not uncommon to need to sharpen your knife, even out of the package. I use everything from diamond bench stones, ceramic bench stones, Japanese water stones, strops etc. Sharpening in an of itself can be a whole endeavor, but it really only needs to be as complex as you want to make it. My personal recommendation is to invest into a King KDS 1k/6k (make sure it's the KDS version) combo stone, and put some hours into learning. I have a short video on what I use for sharpening on my channel from about two years ago, should still be fairly relevant, and there's numerous great TH-camrs out there with tons of great videos on the topic. Big Brown Bear and Michael Christy just to name two off the top of my head.
