Leather for soles has been around for many generations. (Vintage shoes especially heels on ladies footwear were glued and stacked together)He probably used a hard and rigid type that is as durable or more than rubber. Its an old technique and it worksss
@Adele it makes the sole more stiff, not softer. I'd personally stick with the original Vibram sole, but this is a lovely job. these are meant to be minimalist "barefoot" shoes, where you can feel what you're walking on. making the soles more rigid -- you'd have to break them in all over again, but someone might prefer that.

Question ; why do you need to heat the glue ?
He applied it then it dries, he heats it to make it sticky again
you let it dry so it sets deep into the leather and then just barely heat it to reactive the adhesive
