I accidentally used some brown butter w sage for a shortbread cookie and it was actually pretty damn good! It has become a regular in my lineup since, sometimes we dip them in blackberry compote if we have berries growing at the time.

It is such a simple concept, but I have never thought of dividing a cookie dough recipe and making more than one kind of cookie with it. While I am pretty sure some of June’s more radical combos will not be used, I definitely will use the divided dough idea.
I kept waiting for the hot sauce version to appear. Poor Aaron.

June, you became my favorite TH-camr from your budget challenge videos. My kids (13 and almost 11) love you, too.
One issue we face, though, is that my daughter and I both have celiac disease. I cook and bake a lot, but baked snacks and desserts are tough- all GF flours are not created equal.
Would you be interested in doing a taste test of different gluten free flours in cookies, cake, etc? Rice flour, nut flours, coconut flour, Cassava, etc. Your taste tests are so descriptive and lovely and thorough- I'd love to hear your insights into GF baking.

    • @thank9stars
      @thank9stars 4 ปีที่แล้ว +9

Hi! So sorry, it looks like our site is down. Here's the base dough in the meantime:
      Basic cookie dough:
      ½ c. (1 stick) butter
      ¼ c. granulated sugar (52 g.)
      ½ c. packed brown sugar (104 g.)
1 tsp. your choice of ground spices, extracts, or flavorings
      ¼ tsp. Kosher salt
      1 large egg (46 g.)
      ½ tsp. Baking soda
      1 ¼ c. all-purpose flour (160g.)
      1 to 1 ¼ c. your choice of chopped mix-ins
Preheat oven to 325° and line a baking sheet with parchment. In a medium pot, melt butter. If desired, continue cooking to brown butter, about 5 minutes: Reduce heat to medium low and continue cooking, watching closely and stirring occasionally. Butter will simmer and foam, and milk solids will start to turn golden brown. Once vigorous simmering stops and butter is golden and smells nutty, immediately remove from heat
In a large bowl (or in your pot), whisk together hot melted butter, sugars, spices or extracts (if using), and salt until sugar is mostly dissolved and mixture is smooth and shiny. Let cool slightly, then whisk in egg until smooth and combined.
Fold in flour and baking soda until just combined, then fold in mix-ins until evenly distributed. Scoop heaping tablespoons of dough and transfer to prepared pan.
Bake until edges are golden and tops are set but still blonde, 11 to 14 minutes.
