As a 60year-old from the Midwest who fell in love with New York bread in the 80's after spending a lot of time in the Bronx this is PERFECT! I miss the NY foods, Italian bakeries, Jewish deli's, omg I'm in the central valley and these people do NOT know how to cook! The best restaurant here is Sizzlers! That's not saying much!! Thank goodness I have my Puerto Rican-Ecuadorian-Italian roots and recipes so it can almost feel like home again!

I came in search of a recipe for Italian Bread. The first video I chose was yours; and as soon as I started watching, I knew that this was the recipe for me. Initially, it was because you had this adorable apron with ELEPHANTS on it! I love elephants, and they have a very special place in my heart and my family's hearts. I plan to make a loaf of this bread, hopefully, tomorrow. I also want to try the Kaiser roll recipe. I bought a stainless steel press years ago and never used it. It's much smaller than yours, though. Anyway, thank you for being my inspiration! 😊
Thank you so much for your video. My boys and I made some homemade butter and I was looking for a bread recipe that would be easy to make and enjoy with it. Your recipe was so great! My boys and I made it as a homeschool learning lesson about baking and the results were great. We ate it tonight with pasta, marinara, and the fresh butter we had made. My husband told us not to look for another Italian bread recipe that this was "it" and not change a thing. Thanks again.
Ooh! Homemade butter - YUM! That is SO great to hear! I absolutely love how you turned it into a fun learning lesson for them! I’m beyond thrilled you guys enjoyed it. I make it at least four times a week for us. The only thing I just recently found that makes it a tiny bit better is “high gluten flour”. It’s really hard to find though (usually have to buy it from restaurant supply houses/online retailers”. All it does though is make the bread a tad bit more chewy and airy. I agree with you also. The BEST Italian bread recipe on TH-cam or anywhere. I was raised in NY/NJ, and I know what it should taste like. Out here in California where I live now, you cannot find bread like this. It's a really good recipe. I went to baking school, so I know lol.
@@ShannonK.OBrien High gluten is bread flour usually...we can get it here or from Amazon. The gluten builds the longer the dough sits, and the kneading makes the gluten work also.
@@ShannonK.OBrienBingo! I use Anthony’s vital wheat gluten (on Amazon) to add protein & it makes a huge difference! I add 1TB per 2C bread flour if I can’t find the KingArthur high protein flour!

1:12 I had been saving for a kitchen aid for so long…… but finally got fed up and bought a cuisinart. I’m happy with it. It does the same thing at half the price. I have the same attachments as a kitchen aid. And no I do not work for cuisinart. I’m just frugal.

This recipe is fantastic! Instead of one large loaf, I made 4 smaller ones. For my stove at 400, I needed them in for 25 min. They came out AMAZING! You won't be disappointed. Very simple to follow. Like she said, the hardest thing is waiting for the dough to proof a few times. Happy baking!

I was lucky three differently run Italian bakeries one in West Virginia,and two in Ohio. Each the same as yours in taste and texture. Hi Shannon, 1st I want to thank you for having the perseverance of continuing to make this and the kaiser rolls until you go them perfect. I have a few suggestions if you are interested. I cover my bread with a dry towel and it never sticks. I didn't know if you had a special reason to use a wet one. If you cut the slits in the bread before the last rising you won't have to worry about cutting it after it has risen. The very best Italian bread I ever had was from my friend's nephew's bakery (no longer in business)out in Suffolk county. What made his bread distinctive was that he used malt in it like you use in the Kaiser rolls. You may want to try it to see how you like it. You are right about not being able to get that bread anywhere. I moved to NW PA in 1975. The supermarket had lots of kinds of bread and I tried them all. Amazingly what they did was use one recipe and shape the bread differently for Italian bread, kaiser rolls, regular rolls, sliced white bread. I was shocked to say the least. 😄 I tried a few recipes but it was never the same. When I would fly into NY to visit family I would bring back a shopping bag full of Italian bread and kaiser rolls and freeze all of it as soon as I got home. People always smiled when I got on the plane with all that bread. The last few times I was in NY they no longer have the racks of bread in the deli's which use to sell for 79¢ a loaf 😀and the supermarket bread just didn't taste the same. So thanks again for sharing these wonderful recipes. 🙂🙂

I moved from Rochester NY to the vilages Florida and i cant find any good bakeries that make good fresh Italian bread. So i bought this bread machine and i am trying to learn how to make Italian bread in particular in it. Thank you for the tutotial, today will be my first attempt at it. Wish me luck! Shannon, I just did a loaf. Followed everything to a tee. You have the same mixer I have. I waited for mine too.the chewey b texture of the dough was oh so perfect! The chew was perfect! Almost bagel like. wish you all the best😀

My best friend growing up was an Italian from Long Island. His mother made the best bread I've ever had. I could eat just the bread for a meal and I would be fine. It's been 25 years since I've had that bread and it would be amazing if this tasted like hers. I don't remember hers being shiny like she used egg wash but I'm going to make this bread this weekend anyways. Maybe two loaves, one w/ egg wash and one without. Can't friggin' wait!
I just wanted to tell you that I've made this bread twice already, and it is SOOOO DELICIOUS! I chopped up some rosemary with olive oil and infused it inside and out while forming the loaves (i made 2 small ones), and my sister and I ate a whole loaf in one sitting....for dessert!! Thank you so much for this recipe. It will be in our family now! (P.S., I'm still waiting for my kitchen aid and I'm in my 60's!)

I made this yesterday. I used bread flour, and I put semolina flour on parchment paper just b4 baking. It was so delicious. Thank you for this recipe. It is for sure Long Island Italian Bread.
I'm glad I found your video. "Oh my gawd!" I spent 10 years on Long Island eating fresh Italian bread from the Rocky Point Bakery. Moving back upstate was all good except for what purports to be Italian bread. It tastes suspiciously like French bread they sell too. Which all taste like Wonderbread. I've baked my own breads for quite some time now, but I've always had a problem with a hard crust and dense interior. The hard crust of my skull has kept me from trying a different recipe for a better result. The loaf I just baked using your recipe, and noted patience, came out very well. I'm jacked on carbs. Thanks for taking the time to share.

Awesome. I grew up outside of Albany and back in the day you could pick up a great loaf of bread when Albany public or and of the local grocery stores had a good bakery. However when the box stores came in the quality went down a lot. I have been look for this bread for a long time thanks for sharing this

I really liked the way you made the bread some make fun of the way or some of the steps i take like sprinkling oil into the bowl then putting dough ball into bowl and coating it that way (just as you did) been making my Italian bread this way for years. I do however make 3-4 slits across the bread (very sharp knife) just lightly on loaf. thank you
As a home grown Jersey boy living in the south to support our nations Navy for the last 40 years and with family still in south jersey, this recipe is the CLOSEST I can get . The dough recipe is on point. Like you, the Kaiser stamp is really not a necessity. The only thing I tweaked was using a prodding box for the roll rise. The “ALDI” everything bagel seasoning is a must!
A pound of yeast has come down since this video was made. As of today, (On Amazon) pound of Fleischmann's yeast is 6.87. I can't wait to try this recipe! Thank you so much and you have a new sub.
Love it, now that I know... Not to use tablespoons full of yeast! LOL. Thank you so much, Shannon, for sharing this recipe. I've missed LI Italian bread for 55 years, but with your recipe I can make it myself! Please do give us the gram equivalent of flour you use, whether AP or bread flour, as we will always get it perfect by weighing it out as opposed to measuring by the cup. However, even with the uber yeast, this bread has the moisture and texture I remember so well. I did add 1/2 tsp of diastatic malt, and topped it with sesame seeds. A note about scoring the top - if you hold your blade almost horizontal, you'll release just enough pressure without affecting the rise, and just a few diagonal cuts will create a professional look. Shallow cuts, holding blade as horizontal as possible. Learned this from a TH-camr with video on scoring baguettes! Thank you again. Can't wait to try your kaiser rolls. But I have to get more flour, first. 😮
I agree, using grams helps so much. That being said, I’ve learned to watch how the video creator measures their ingredients & copy what they do to get their results since not all of us use scales!❤️❤️

Can you confirm how much of yeast, 2,5 tbls or 2.5 tsp? In the video you said tbsp but in recipe tsp

Hi Shannon, 1st I want to thank you for having the perseverance of continuing to make this and the kaiser rolls until you go them perfect. I have a few suggestions if you are interested. I cover my bread with a dry towel and it never sticks. I didn't know if you had a special reason to use a wet one. If you cut the slits in the bread before the last rising you won't have to worry about cutting it after it has risen. The very best Italian bread I ever had was from my friend's nephew's bakery (no longer in business)out in Suffolk county. What made his bread distinctive was that he used malt in it like you use in the Kaiser rolls. You may want to try it to see how you like it. You are right about not being able to get that bread anywhere. I moved to NW PA in 1975. The supermarket had lots of kinds of bread and I tried them all. Amazingly what they did was use one recipe and shape the bread differently for Italian bread, kaiser rolls, regular rolls, sliced white bread. I was shocked to say the least. 😄 I tried a few recipes but it was never the same. When I would fly into NY to visit family I would bring back a shopping bag full of Italian bread and kaiser rolls and freeze all of it as soon as I got home. People always smiled when I got on the plane with all that bread. The last few times I was in NY they no longer have the racks of bread in the deli's which use to sell for 79¢ a loaf 😀and the supermarket bread just didn't taste the same. So thanks again for sharing these wonderful recipes. 🙂🙂

Shannon, I just did a loaf. Followed everything to a tee. You have the same mixer I have. I waited for mine too.the chewey b texture of the dough was oh so perfect! The chew was perfect! Almost bagel like. wish you all the best😀

I am baking my 3rd loaf of your bread, we love it.
My best friend growing up was an Italian from Long Island. His mother made the best bread I've ever had. I could eat just the bread for a meal and I would be fine. It's been 25 years since I've had that bread and it would be amazing if this tasted like hers. I don't remember hers being shiny like she used egg wash but I'm going to make this bread this weekend anyways. Maybe two loaves, one w/ egg wash and one without. Can't friggin' wait!

I just wanted to tell you that I've made this bread twice already, and it is SOOOO DELICIOUS! I chopped up some rosemary with olive oil and infused it inside and out while forming the loaves (i made 2 small ones), and my sister and I ate a whole loaf in one sitting....for dessert!!

I made this yesterday. I used bread flour, and I put semolina flour on parchment paper just b4 baking. It was so delicious. Thank you for this recipe. It is for sure Long Island Italian Bread.

I'm glad I found your video. "Oh my gawd!" I spent 10 years on Long Island eating fresh Italian bread from the Rocky Point Bakery. Moving back upstate was all good except for what purports to be Italian bread. It tastes suspiciously like French bread they sell too. Which all taste like Wonderbread. I've baked my own breads for quite some time now, but I've always had a problem with a hard crust and dense interior. The hard crust of my skull has kept me from trying a different recipe for a better result. The loaf I just baked using your recipe, and noted patience, came out very well. I'm jacked on carbs. Thanks for taking the time to share.

Awesome. I grew up outside of Albany and back in the day you could pick up a great loaf of bread when Albany public or and of the local grocery stores had a good bakery. However when the box stores came in the quality went down a lot. I have been look for this bread for a long time thanks for sharing this

I really liked the way you made the bread some make fun of the way or some of the steps i take like sprinkling oil into the bowl then putting dough ball into bowl and coating it that way (just as you did) been making my Italian bread this way for years. I do however make 3-4 slits across the bread (very sharp knife) just lightly on loaf. thank you
As a home grown Jersey boy living in the south to support our nations Navy for the last 40 years and with family still in south jersey, this recipe is the CLOSEST I can get . The dough recipe is on point. Like you, the Kaiser stamp is really not a necessity. The only thing I tweaked was using a prodding box for the roll rise. The “ALDI” everything bagel seasoning is a must!

Not to use tablespoons full of yeast! LOL. Thank you so much, Shannon, for sharing this recipe. I've missed LI Italian bread for 55 years, but with your recipe I can make it myself! Please do give us the gram equivalent of flour you use, whether AP or bread flour, as we will always get it perfect by weighing it out as opposed to measuring by the cup. However, even with the uber yeast, this bread has the moisture and texture I remember so well. I did add 1/2 tsp of diastatic malt, and topped it with sesame seeds. A note about scoring the top - if you hold your blade almost horizontal, you'll release just enough pressure without affecting the rise, and just a few diagonal cuts will create a professional look. Shallow cuts, holding blade as horizontal as possible. Learned this from a TH-camr with video on scoring baguettes! Thank you again. Can't wait to try your kaiser rolls. But I have to get more flour, first. 😮
I agree, using grams helps so much. That being said, I’ve learned to watch how the video creator measures their ingredients & copy what they do to get their results since not all of us use scales!❤️❤️
