i think i might be able to answer this. at 1:56 he says "I'm a white dude in southern california". so am I, Los Angeles. often dollar stores and markets carry tamarind, and ice cream trucks and mexican street vendors pushing Ice-cream/Corn karts often carry tamarind candy similar to a spicy fruit roll/fruit leather, mexican markets always have dried tamarind. don't ask me anything beyond that, i know nothing else, other than tamarind candy is awesome.
Tbh I really respected that he's upfront that it won't be authentic and the scuffed nature of the video made it hilarious lmao

Pailin's Kitchen is who I reference because she's more honest about the taste of different brands of ingredients. The wifey makes pancit so pad thai was a natural alternative to learn. Lots of the Thai restaurants I like closed down after lockdowns. The survivors are more Vietnamese and cater to Mainland people who don't know.

I think a year ago he was ready to quit youtube because the hate comments and the usual online harassment you get when you're big were getting to him, and I don't wanna make assumptions but he seems like a kinda generally stressed out guy. Such a weird concept. Instead of "can I make X with ingredients only from the dollar store?" it should be, "I'm going to the dollar store to buy ingredients to make dinner, what can I come up with?" There's some surprising stuff in there, but if you go in with a rigid plan for what you want to cook you're going to have to make a bunch of weird substitutions.
If he hadn't restricted himself to Dollar Store and had the right ingredients, that could have been a decent Pad Thai. But this is William Osman we're talking about, we're lucky he didn't make it into a battle bot.

I quite like his upfront honesty, and that he carried the theme throughout the video. The end taste was a bit to be expected, given the homebrew fish sauce. But I'm honestly flabbergasted by what he was able to find in his dollar store. If my local equivalent had the same stock... I'd love to see you doing an: as cheap as possible, yet still taste decent challenge.
My local dollar store has canned chicken breast chunks. SAME brand as regular stores sell for $3.99, but 1/4 of the price. (literally the same brand, not the cheaper sell-off brands from the same factory). And like fresh chicken breasts, no real flavour...but marinated, it fries up well to be in soups, fried rices, or as a pizza topping! Always hit or miss, but a lot of the stuff can be seriously okay to use!

At the $0.99 Store which is what's in the video yeah they would sell real tamarind and ground shrimp but I never except the guy to find shrimp paste and I think you can find frozen shrimp there, oh you can also find soybean sprouts and mung bean sprouts but sometimes they have it other times they don't have it. But you can never find rice noodles, fish sauce, garlic chives, palm sugar, and fresh chicken and shrimp at the $0.99 Store.
To be honest, he did great for what he got. Watching Pro Chef and Home Cook videos on TH-cam, he did a good job. He used a bunch of international and peculiar ingredients making Pad Thai. It's not the Pad Thai Uncle Rodger was expecting, but he did great for the cheaper ingredients he had.
Meh. He could have done a better job without the sardine nonsense and using the proper noodle.
No. I made many things when I was living in a house with virtually no food. Years later, after getting into a better situation, I created those foods again. On the "remake" the food was virtually inedible. This food reminds me of things I made when there was no food.
When there is no food, ALL food is good. When there is food (Not expensive, just existing), food like this will make you sick.
Be nice to Caretaker! Her hair is beautiful, and she's fantastic at keeping William from burning down (more) houses.

I’m not too surprised that he was able to find tamarind, dried shrimp, etc. at the dollar store in Southern California. We have a very diverse immigrant population in California who like to shop at dollar stores looking for bargains like everyone else. The market is certainly there for those ingredients in those stores.
Tamarind/ Tamarindo is a very common ingredient in Mexican stores. I see it all the time when I go to the stores
We actually found one, someone critical of his cooking who admitted the end result wasn't the best thing since sliced bread. Jack would look dead into the camera trying to choke it down but still insist it was Michellin quality.
He's said he's in southern California, he's probably in an area that has a larger Mexican population, hence the tamarind and shrimp, but a smaller Asian population, which is why no fish sauce.
Well, I have to admit it's the best Pad Thai I've ever seen made in a dirty garage.

I've looked at that bit twice, I don't think he got shrimp paste. I think he "made" shrimp "paste". IE, adding water to the dried shrimp...which isn't shrimp paste.

To be fair, some of his food experiments are pretty damn hilarious. Dude is a very competent engineer that once made a salsa machine from a garbage disposal, made a literal gravy train to spurt gravy on people plates while following a path for Thanksgiving, and made an electrified floor in order to intice his roommate that stomps around all the time to get shocked in hopes of reaching Spam Musubi.
I haven't tried to make Pad Thai here yet, but I think it would be an interesting challenge for my local grocery store, since I live in the jungle in a village of 200 people. Looking on the Hot Thai Kitchen website, there are few problematic ingredients. The dried shrimp will be impossible. Daikon is also a no-go, but perhaps I could pickle some regular radishes from scratch? I can get fresh tamarind from the garden, so I think I can make my own paste from that. garlic chives I usually sub for green onions and a bit of garlic. Bean sprouts are also tricky, but I have sprouted my own lentils before, perhaps that would work? Other than that, I think I can get everything. Any thoughts on this plan Chef Brian?
My step mother was from the Philippines and she would sub meats in any dish with small cubed hotdogs or spam. She didn't understand why Americans cared since it was "our" food anyways. Made from the same animals. She wouldn't sub rice noodles though.
About the noodle reminded me laksa in Malaysia. We have different kind laksa, laksa penang, laksa sarawak, laksa kelantan, laksa johor, laksam. Most of the noodles used in these are some kind rice noodles just in different shaped except laksa johor using spaghetti noodle. Quite often people made fun Johor people using far different than typical noodle 😂

The white people and fish sauce thing is especially funny because of the history of Garum, a salty fermented fish sauce made and enjoyed by the Romans and likely spread throughout all of Europe.
I think its crazy, cause one of the more popular white people sauces is a fish sauce. I mean Worcestershire sauce is just british fish sauce and most people dont even realise it, especially those that flip out about asian fish sauces being nasty. Its made of anchovies, molasses, tamarind, vinegar, cloves, onion, and a few other seasonings depending on the manufacturer.
California has some insane dollar stores. Lots around Latin and Asian areas especially. Always good selection. One of the few things I miss from there.

Sometimes it's also good to re-write the recipe if something feels off while reading it...*cough* Good Food Box *cough* sometimes you'll find the last step is to combine it with "X", which is an entirely separate recipe. Sorted Food has a few videos on cooking out of a massive old cookbook that looks like hours of chasing references within the book for a single dish... Add "X" - which is recipe "Y" + "W", which you need recipes "A" through "C" to complete...

Would like to clarify us Filipinos don't put hotdogs in pad thai. Only in pasta with marinera.
Tried using pasta on Asian soups and sauces the hard way, it doesn't work except for Sopas which worked fine at least.

I have made a really quick fish sauce before cos I'd run out of the real thing.
But I used brined Anchovies, smashed them up and cooked them in a soy sauce/Xiao Xing/garlic concoction for 20-30 minutes, making sure I mashed the anchovies, and reduced the liquor sufficiently.
It wasn't Fish Sauce per se, but it did the job for an impromptu Ramen-ish dish..
Having been born and raised in California, I've been to quite a few "99 cent" stores there (the name of the chain brand store he's at).
So for a poor person pad thai... it could've been a bit better if he found a few more ingredients or went to other 99 cent/dollar stores. But... it definitely could've been worse lol
I would give it a try if the noodles were actually cooked fully. I wouldn't expect much to begin with though lol

I know it's nice to get the extra clicks/attention by getting to include Uncle Roger in your thumbnails, but I genuinely think your videos/content would be more interesting if you mostly reacted to the ORIGINAL videos, not another reactor's video. It would give YOU more opportunity to speak your mind, share your thoughts/experience, which is why I'm coming to YOUR channel, not Uncle Roger's. Just something to think about!

I'm not white but to be frank, shrimp paste doesn't even really smell bad imo (even when cooking it large amounts). I have smelled much, much, MUCH worse before lol.
This is ok like a non Canadian trying to make poutine. 😂 they usually cant find proper curds so they use mozzarella. Its totally ok and tastes fine. But its not the same so we like to call that disco fries.

I respect the hell out of this dude. Think about it he's like a cooking with jack, ez cooking for the average poor man. Yes his food is nowhere near as nice as like Guga or Joshua Wiseman. That being said you have to admit this is orders of magnitude better than jack! lol
Shrimp paste and shrimp chips and lots of shrimp flavour stuff smells so bad, but is great flavour bombs and tastes really good.
There is nothing wrong with hot-dogs in a Pad Thai...it is a few decades ago now that I made a 'Bockwurst' Pad Thai, although in my defence I did NOT use Italian pasta!!!... Also, one tip with Asian Fish Sauce. ...If you are a student and share a kitchen, then keep a bottle of fish sauce in 'your' cupboard, no other student will steal your food. Fish sauce makes and effective thief deterrent!!!

Super processed meat products are very very common in Asian foods. Just look how popular Spam is in Pacific islander cultures and korea and Japan and that's all hot dogs really are is that same super processed meat stuffs
