I would just choose a super soft baby yarn from JoAnn probably. Make sure it's washable! I wouldn't use two strands unless you find a thin yarn you like and want to make it squishier, then you can definitely hold it double :)
I am a beginner, so I don’t understand why do you do differently between single color and multy color. What I mean is the number of chains for the hight, and the way you insert the hook in between the yarns. this one is more complicated than the multy color one.
