Look at the top of your screen. You can toggle Fill, Clear Inner and Clear Outer. It saves the incredibly annoying menu fiddling after each cut. Will save hours of work and more importantly your sanity.

So... knapping. This is rock knapping. The art of shearing pieces off of rocks to create arrowheads, and are heads, and other stone age tools. I dig it.
That's just how it is going to look like in Blender. You have to put actual textures in order for the edges to show up in different game engines. That rock is nowhere close to your thumbnail.
Insert a plane mesh and in editing mode use proportional editing and transform tool to make mountains rivers etc while caves can be their own mesh since they are hollow
you know the 4 render circles? click on the 2nd one and press the arrow next to the buttons. Then enable cativity. make sure your on the 2nd render type (viewport shading) to see it
So this is just a "viewport shading" setting and will only be visible while working unless you set up some nodes to replicate the effect. If you wanna just see it and have it look like he has it in this video just check "cavity" and jack the "ridge" value up.

One hint: in the top you can also pre-define fill and one of the clears. Then you don't have to deal with the checkboxes everytime. If the cut would get rid of the wrong part of the mesh: hit F. Then the other side will become cut out.
Just letting anyone else know, this video doesn't show you how to keep the cool stylized edges when exporting the object. I think you need to bake that in but I haven't figured it out yet :/

If you want a way to quad them, cause ain't no way you're putting N-gon rocks into your projects. Ctrl F in edit mode and click "Triangulate faces". Shade auto smooth and control the angle if you to remove the lines from the triangulation.
Would have given thumbs up if you also triangulated those ngons on the rocks. Quads is considered fine but they too will be turned into triangles in the end 😉 Ngons are (surface with more than 4 vertices) is just considered bad for many reasons. You can create ngons because that makes modelling in general easier at times but should never be used on a final asset. Side note: low-poly meshes are also more sensitive to automated triangulation and the risk is higher that those models cause strange shader and lighting behavior. Some, especially older, import and export tools might error on you if a mesh got ngons. A common modelling method is to use your favorite tool to remesh or triangulate the object into triangles, then increase the number of surfaces a bit as well if it will be used for close-ups.

this + polygon terrain = perfection
When you cut, the arrow in a circle shows you what side of the cut Blender considers as outer. So you don't have to guess each time.

u can also bevel vertice faces with ctrlB+V, edge slide with GG, and merge vertices to further mod the rock after ur done cutting
tip: if your not getting the glow from the lines like he is, when you turn on cavity, next to it change the type from screen to world!

"Make Planar Faces" operator can make quad/ngon vertices coplanar thus eliminate the shading problem.
you can use bevel to make it look more complex if you want :D

i've been trouble importing this to roblox, when I import it it gives an error, I tried both bulk import and mesh part import.

its misleading. It's called Cavity in the shadow drop down menu top right. Its only in Blender and isn't actually apart of any material.

cavity isn’t a texture thing it’s just a setting u can turn on in blender it’s not a texture modifier
