The potato starch is used to thicken the sauce. Otherwise, the entire dish would be watery like soup. It has nothing to do with keeping the meat tender. BTW, let the dish sit for maybe 10 minutes and the fried pork will get mushy, potato starch or no potato starch.
As an asian, i fully encourage u all to try making this dish...it wont go wrong..felt the style and flavour of this dish would suite most taste buds across the world.

These channels are truly awesome I've actually learned how to make sum of these like takeout. A little research a cheap Walmart electric wok. It's total comfort food.
I made this once and it turn out quite good. Then one of my friend suggested I use beer batter. Each piece of pork expanded 2x its size so at the end the dish is piled up like a mountain and it took 2 rounds to coat the fried pieces with sauce.
Guys if this one gets you going.... The Limster brought out a 3 minute 20 video,shows boiling down the red sauce,cutting the pork.etc He's got more time,and the quantities are a cinch. It's not a short,its way better if you are going to give this recipe a try,it will remove any doubts you have to give it a crack. You will have the biggest smile on your face when you cook this one, I did.
I made a version of this but used lean pork loin, air fried it without batter and stir fried the veggies rather than deep frying.. not near as good as if i followed the method but I Made enough for 5 days of meal prep.. store version is a treat but too caloric for my daily diet.. that sauce is sooo good
