Just and observation. These cans are not made from aluminum. They are steel cans coated on the inside with a food safe coating to prevent corrosion. Aluminum is not applicable for these cooked in can food items.
Yes the large can would be a number 10 can. The medium size or tomato juice can would be a number 5 can. At least that's what we have always called them in the kitchens I've worked in.

How did that sealant hold up?
It held up pretty well. I'm sure it won't last forever if I use the stove a lot, but I think it definitely helps.
