The lemons i have are pretty small, about the size of an Extra Large Egg. It takes about 6 lemons to make 1 cup of juice. Could you please let me know the amount of juice in a measuring cup. The average amount of juice from 1 lemon is 3 Tbsp, so I would use 6 Tbsp. Here are the updated ingredients: Lemon Pie Cobbler Filling: 2 c water 2 c sugar 1 tsp salt 6 Tbsp corn starch Juice of 2 lemons (approximately 6 Tbsp) Zest of 1 lemon 4 egg yolks, slightly beaten 1 Tbsp butter Cobbler batter: 1 stick of butter (1/2 cup) 1 c flour 1 1/2 tsp baking powder 1/4 tsp salt 1 c sugar 1 c buttermilk 1 tsp vanilla extract 1 tsp lemon extract Enjoy!
i personally think when one is doing a fruit dessert that requires measurement ...say a banana bread/cake or potato pie ... smash or squeeze the pulp or veggie filling and THEN MEASURE it ...and THEN tell me how much of it is required in the recipe ...EXAMPLE : dont just write the recipe as TWO bananas ..or TWO lemons etc ...say Two cups of banana filling or TWO cups of potato filling or 1/2 cup of FRESH squeezed lemon/orange etc you almost have to write recipes so simple that even a child can do it less guessing/assumptions .......it helps a WHOLE lot!!
My Mom used this recipe for her cobbler and while she preferred it with buttermilk, she would use regular milk sometimes as well. For a peach cobbler, she would add cinnamon and a few drops of almond extract. I’ve never thought of doing a lemon one. That looks delicious.

A suggestion, not that you need it, but you might find it makes cooking the filling to be easier to prevent sticking on the bottom. Use a wooden stirrer with a flat edge, you can go around the bottom and not miss anything, and it also gets the sides to prevent sticking. There are solid face, and a flat edge with slots in the middle. Try it, I think you’ll be pleased. A rounded spoon only gets just the stuff that the pointed end touches, and when you’re cooking curds or things that you need to be really cautions about not letting anything stick, a flat edge is wonderful. BTW, I love lemon anything and will be trying this recipe.
LOL, didn't know that's what it's called. I have one but I prefer to use a French whisk. It gets into every crevice of my pots/pans. The one I have has the rubber covering the metal which is great because the sound of metal on top of metal scratching up against each other gives me goosebumps, lol...
Oh my goodness! I make a cobble with fruit like this by putting melted butter in a baking dish (9X13 ) then pour the batter over the melted butter then place fruit pieces all over the batter and then pour the juice from canned fruit over the entire top then I lightly sprinkle regular sugar and cinnamon all over the top then bake at 350 degrees 30 to 40 minutes. Yummy! I didn’t even think of a pudding cobbler working though ! I’m so happy you posted this and I will definitely be making it !! Thank you so much for sharing this recipe ! Blessings ❤️

My mom had several similar recipes from the 30’s. My favourite is chocolate with walnuts and when done there is beautiful chocolate sauce on the bottom. Great with ice cream.

SAUCE .75 Cup Sugar 7.5 Tbsp Cocoa 2.5 Cups Boiling Water -Mix all sauce ingredients in a large casserole dish. (I do make more sauce because it is so good...times recipe by 1.5 or double) BAKE - 350 for 40-50 minutes. Cake will come to the top. Good served warm. SERVE - take a scoop of cake, top with vanilla ice cream and then sauce.

I found this very interesting...I LEARNED to bake lemon meringue pie using milk and flour and she taught me how not to curdle the milk and eggs when using acids like the lemon juice can and will do most of the time. I and my family prefer the creamy texture of the milk and flour over the gelatin texture of the corn starch and water. I plan on making this with my families pie filling for a cook out over the Labor Day Weekend cook out over my regular peach cobbler that I am usually asked to take... All in all, sounds like it will be very good
I love your green bowl. My mom had the same one, it was a wedding gift back in 1968. It was primarily used as her batter bowl and I wish I had it. One of these days I’ll breakdown and buy one off of eBay.

Mom always baked her cobbler crust for about 10 to 15 min before adding filling. Just makes a really good crust around the edges.💞💞💞💞😸😸😸😸
I haven’t tried that, but this did get nice and crispy on the edges from the butter.

My mom had several similar recipes from the 30’s. My favourite is chocolate with walnuts and when done there is beautiful chocolate sauce on the bottom. Great with ice cream.

CAKE
4.5 Tbsp Cocoa
1.5 Tsp Baking Powder
1 Tsp Salt
.75 Cup Sugar
1.5 Cups Flour
.75 Cup Milk
3 Tbsp Melted Butter
1.5 Tsp Vanilla
.25 - 1 cup walnuts or pecans, coarsely chopped
-Stir together all dry ingredients, add everything else and mix well.
-Drop batter by large spoonfuls into hot sauce mixture.
SAUCE
.75 Cup Sugar
7.5 Tbsp Cocoa
2.5 Cups Boiling Water
-Mix all sauce ingredients in a large casserole dish. (I do make more sauce because it is so good...times recipe by 1.5 or double)
BAKE - 350 for 40-50 minutes. Cake will come to the top. Good served warm.
SERVE - take a scoop of cake, top with vanilla ice cream and then sauce.

Try using milk instead of water. That is how my grandmother taught us. It is delish.
My mother taught me also and use milk instead of water in cake making. World of difference

I will have to try this. 8 x 8 is the right size for me. I miss my mom's lemon meringue pies and lemon bars. Love anything lemon. Interesting to see the cobbler done in reverse, so to speak. I, too, am a messy cook, and the splash over the pot was great!

I have not eaten Lemon Pie Cobbler, but after seeing this video of you making it I have to try making it at home and made sure that I copied the recipe so I don't forget it. I make things wheat free by using barley flour or another ancient grain and I always add oats to my cobblers and crisps for added nutritional value.
I found this very interesting...I LEARNED to bake lemon meringue pie using milk and flour and she taught me how not to curdle the milk and eggs when using acids like the lemon juice can and will do most of the time. I and my family prefer the creamy texture of the milk and flour over the gelatin texture of the corn starch and water. I plan on making this with my families pie filling for a cook out over the Labor Day Weekend cook out over my regular peach cobbler that I am usually asked to take... All in all, sounds like it will be very good

I love your green bowl. My mom had the same one, it was a wedding gift back in 1968. It was primarily used as her batter bowl and I wish I had it. One of these days I’ll breakdown and buy one off of eBay.
