    Bev, you're the best teacher on canning. Never condescending or patronizing. The turkey broth looked; totally winter weather comfort food.

    Beverly, I do not comment much but I have to tell you. I have been watching you for years now! Your voice and teaching style is so comforting. My Mom who passed away 31 years ago was from a family of 10 kids 7 girls and 3 boys. My Aunts have all passed now and listening to you brings a flood of memories of days gone by with all those women in Grandmas kitchen cooking sharing and LAUGHING with big hugs and guidance. I just wanted to say a Big Thank you. Comfort right now helps even more in these stressful times! I love the wooden spoon idea by the way! God Bless you and your beautiful family.

  • @karenwest5912
    @karenwest5912 2 ปีที่แล้ว +2

    Ms V
    I do whole chickens or leg quarters like your turkey. Quarts for dinners and pints for side dishes, both with and without meat. I did 2 turkeys the first of the year and I hope there will be turkeys for this year’s holidays. If the price is right then I’ll can up MORE! Plus one or two for the freezer. Go Gracie! She needs her share too. Hey what’s hot soapy water with a little bleach used for? CLEANING my dishes every day. So pups 🐶 enjoy themselves too.

    I like to roast whatever bones I am making broth with. It adds a depth of color and richness to the broth. I usually just put it in a roaster and let it simmer low and slow at least 24 hours. I am sure the pressure cooking extracts all the flavors but I really like the layers of richness from slow cooking. 12 quarts of tomato juice done on Tuesday. Making more sauce for canning today to add to the 5 pints already done. I have a bushel to get worked up today, so I may be doing a couple of recipes. My tomatoes are just starting to ripen. I have a good connection with some area produce folks and I am willing to spend $ on their good produce to can, freeze, ferment, and dehydrate myself. Every middle person handling my food is cut out making it safer and more environmentally responsible than the end product at my grocery store!

  • @cdavid2486
    @cdavid2486 2 ปีที่แล้ว +3

    It IS pure gold! Thank you for the ideas of using the pressure canner to extract the flavor and make the broth. I have been doing it in crock pots, on top of the stove or in a roaster. Seems much more efficient to do it your way.

    I think 90 minutes seems about right when you are cooking it! I add a glug of apple cider vinegar to help Leach out the bones of all their nutrients! I always do a few pints of broth also in case I need some for a side dish like noodles or rice! Love home made broth!
