Ingredients to make boondi raita! Mix boondi and curd then add black salt, chaat masala, white salt, dry pudina, chopped coriander and add chilled water. Make a paste of hing, green chillies and coriander and add it to the curd give it a nice whisk add roasted cumin seeds. To make sunnata Use mitti ka diya put it on the flame and add mustard oil, hing and zeera drop it into the curd and cover the lid to keep the frangance of tadka intact and your boondi raita is ready. Ingredients to make kumaoni raita Make a paste of coriander, green chillies, garlic, cumin seeds, mustard seeds, salt, chaat masala and turmeric. Grate the cucumber and add the curd whisk it and add the paste of coriander to the curd mix it and at last add the mustard oil. The raita is ready.

Please don’t add water to the raita, because when it separates it doesn’t look good. I always add milk. That keeps it looking uniform.
