    Is there any advantage to put the shrimps into boiling water before deep frying ??
    I think just dry the shrimps using paper towel first and then coal them with corn starch. I believe boiling the shrimps for 10 seconds will eventually overcooked the shrimp after you deep fried them.. I only used very hot oil to deep fried for 20 seconds and took them all out immediately. 30 seconds in very hot oil will overcook the shrimp although the shell may still look very attractive but the meat will be overcooked. I really want to know why did you boil the shrimp before deep fried !! THANK YOU.

      Chef said boiling the shrimps briefly is to open them up for stir frying . That is so they may absorb flavours i guess. Me, i skip this process cos i think the prawns will lose quite a lot of their flavour in the blanching.

      Yes, you can. But you will find cornstarch is more crispy.

    Hey chef, when you are cutting the prawns with scissors at the beginning it looks like they have the shell on them, but at the end it looks like just the tails and the heads are on them. Are the shells still on at the end or are they removed before you boiled them to open them up ?

      You can't eat the shells they are razor sharp, he most likely peeled them and just left the tail ends on for decoration....

      shell is still on. If the shell is fried well enough, you can eat the shell. I have done it before. or you can just peel off the shell.

    I usually use three kind of flour to coal the shrimps...They are corn starch, tempura batter mix and Panko bread crumbs in the ratio of 1 :1 : 1/2 respectively. If you like crispy shrimps, try it. Make sure the oil is very hot before putting the shrimps in and never overcooked them. IF the oil is hot enough, 20 seconds the shrimps will become golden brown. IF the oil is not hot enough, it will take forever for them to turn golden brown. By the time they have become golden brown, those shrimps will be way OVER COOKED.

      +ray ray Only cornstarch, the yellow and red is from the eggs in the Shrimp head, color is a sign of fresh shrimp.

      when the starch was fried it would be turned to yellow and red. You know, the oil was in very high temperature

      The RED came from the stuff inside the shrimps' head. When you see this, it indicated the shrimps are already DONE. Take them out immediately or they will be overcooked. If the oil is NOT hot enough, you will see the RED in the oil indicting the shrimps are DONE but the shells are NOT golden brown, not crispy. Make sure the oil is very hot before adding the shrimps. Caution: too little oil and too much shrimps will cool down the oil immediately. IF the oil is very hot, 20 seconds of cooking will be enough. Must remove the shrimps as soon as you the red stuff coming out into the OIL !!! I usually do this before it happened but you must have some experience first before doing so. Very hot oil will turn the shells BROWN before the RED stuff coming out !!!!

    I love these videos but I have difficulty hearing and sometimes understanding what's being said. At 1:55 are you blanching in boiling water? If I could make a suggestion in the quality of the videos would be to get a mic closer to the chef

      Yes, if fried well enough the shell can be eaten. Normally the way to eat this dish is to bite the shrimp head suck out the juice, spit the head and eat the body.

    You are smart NOT to following the boiling shrimps procedure. This is totally unnecessary, unprofessional, and will destroy the taste and the texture of the shrimps. When adding the spice of your preference such as salt and pepper etc, it is better to add them onto a DRY and HOT wok first and let them heat up by the wok for a few seconds and then ADD all the shrimps to mix well. This will give a MUCH BETTER
    SMELL OF the spice into the shrimps. Just a little variation can raise the standard of the dish to a much higher level. Try it , please.

      All good points. I tried the pre boiled shrimp for 10 seconds.Then deep fried Then follow your method of the salt and pepper first ( green onion, pepper. Garlic also after) then after then shrimp. . Completely enhanced taste.
      I also tried no pre boiled with your method.
      Verdict... the pre boiled tasted much cleaner.
