I’m watching 8 months since you posted this and you have by far the best video. I was scared to do Italian but not anymore. I have trouble with my ovens too and really have to babysit the Macs when they are baking. Love it.

I have 2 Stand Mixers so I think I use one for one task and the other for the meringue.

I just managed to watch the whole video and thank you so much for putting the effort to share your experiences and show different ovens with different results!🥰 Just one question. Why didn’t you turn your big oven on convection? Maybe you wouldn’t have any lopsided?
My Big oven convection setting is weird and loses heat easily. So I just don’t use it.

In gas oven do we have to turn on fan and for baking what i have to ignite upper or lower side or both

I tried these today. Bad timing. We got chickens and we are building a chicken coop. I was helping my husband build it yesterday and was sore from that. I didn’t realize how much of an arm workout it is to do the macaronage. So my arm was quite sore after that.😆
It might have somehow been too thick too. I haven’t baked them yet. Crossing my fingers they come out!

I use a 9mm tip. Close to a Wilton 12
You’ll have to get used to the look but you want it thick and flowing and smooth

HI what a great tutorial! I have tried these using your recipe twice since watching this tutorial but i am having problems with my feet being very very small each time! I did try increase the temperature of my gas oven a bit but then they coloured on the tops even though i covered them with foil half way through . Do you have any baking any tips for me to get the feet to develop a bit more? Also the tray that i had to leave to rest because of only having 1 oven ended up being lopsided both times of trying these, so i found they didn't work if i left them to dry! 🙂
Try adding more sugar into the almond meal for larger feet.

I made Oreo macarons using black cocoa powder. They didn’t develop feet and after much googling I found information about the fat content in the chocolate. I bought another brand with less fat and they did develop feet. Just wondering if you can confirm or speak to that issue? King Arthur almond flour also has less fat than the one I buy at Costco but a little bag of that in the store is almost a much as a giant bag at Costco 😬
Is it 60 grams of egg white that you add to the 328 g total of almond flour/confectioner's sugar ?
Yes. 60g into the mixer and 60g into paste

I thought that would take you right to it- so on that list it has a Good Cook brand and T-fal brand. The good cook brand is the size I have but the t-fal is the brand I have
