It's my favorite too and I'm not Chinese or even Asian but it's so comforting.
I love Beef chow fun w/ black bean sauce - some Chinese restaurants have no idea what it is, though! One guy said "No one from China would ever make it that way!", and he seemed quite offended that I'd order it that way. I still love it though - I'm definitely going to try doing it myself.

I would recommend cutting the beef against the grain to make it even more tender. I also stir fry the noodles separately to get the wok hei flavor and carmelization of the noodles. The sauce is then poured over the noodles.

I like everything in this recipe, except the black bean sauce. Not my favorite, so will omit it, but sure others will enjoy it.
