  • Hi guys. Today, I'm going to show you how to make Spring Onion Kimchi [대파 김치 : Daepa Kimchi]
    *Cooking tip of making this side dish:
    1. when you soak spring onion in salt water, the spiciness of spring onion will disappear.
    2. better just use white part of spring onion because the green part has the slime [slimy gel].
    3. anchovy stock with fish sauce will create rich and flavourful taste.
    This side dish is very Refreshing. And the spring onion taste is sweet and unique.

    Below are the Ingredients I used in this video:
    Daepa Kimchi Ingredients:
    250g Pickled Spring Onion*
    Sauce*
    1 Tbsp Minced Garlic
    1 Tsp Minced Ginger
    2 Tbsp Rice Syrup
    2 Tbsp Chilli Powder
    1 Tbsp Sesame Seeds
    *250g Pickled Spring Onion Ingredients:
    250g Spring Onion [White Part]
    2 Tbsp Sea Salt
    600ml Water
    *Sauce Ingredients:
    20g Pear
    20g Apple
    20g Radish
    1 Tbsp Cooked Rice
    100ml Anchovy Stock*
    *100ml Anchovy Stock Ingredients:
    5g Anchovies
    200ml Water
    1g Dried Kelp
    2 Tbsp Fish Sauce
