Takes me back to my old job in a old butchers shop who used to cure their own bacon, although they cured thiers for a lot longer and then it was air dried for months, it used to be like concrete. A young me never having seen anything like this was like you can't eat that, but boy when sliced and then to the tasting, all i can say is wow it was heavenly, and none of that crap coming out of it when cooking and splattering all over the place.
Love your fishing videos! But these videos are fantastic! Very informative & entertaining at the same time. I am not a baker at all but your long Easter video remains a personal favourite. Well done!
Been waiting for this video, who would have thought that it was so easy. I don’t eat anything with nitrates in so I must try this recipe. Many thanks for sharing this and roll on the fishing season.
I had a go after the fishing video in which you mentioned your own cured bacon . Followed a BBC recipe. Will try your method next time. Tight lines for next season .
Hi Rob you converted me when you showed the first bacon while fishing , I enjoy your vids and being a retired chef and salmon angler with time to enjoy it’s a great mix. I took some shooting with me, bacon butty in the field cooked Al fresco feast of kings, tight lines.
I have worked for a baker, from 11 in the evening to 7 in the morning, heavy work daydreaming of being home and getting some real sleep. Luckily I don´t do that any more.

I'm trying to cut down on anything overly processed myself and it takes no work to make the bacon.

It's a hard way to earn a crust
Once cured, how long will it keep in a cold place?
Just treat it like any other bacon, it will last a good while in the fridge
