- ⚠️ DANGEROUSLY ADDICTIVE ⚠️ Lets recreating that nostalgic Chinese New Year snacks with me today! If you're feeling nostalgia like me, take a trip down memory lane by making some sourdough chips together. I know its too early for it, but why not right? These are not ur usual CNY nor sourdough discard recipes, but it is a happiness in a snap! Thin layers of crispy baked chips with a selection of both sweet and savoury goodness into 1-2mm* perfection. I bring you the most indulgence flavour: Brownie-almond, Apam balik (peanut pancake turnover), Parmesan cheese and Salted egg yolk chips!
Crunchy delights baked to golden brown by only using sourdough discards and few other simple ingredients. Easy, effortless and delicious! Now you don't have to worry "too much discards" piling in the fridge now. Let's make some sourdough chips at home. Believe me, these are EXTREMELY addictive!
BROWNIE CHIPS
150g Sourdough starter/ discard
15ml Condensed milk
30g Sugar
2 tbsp Cocoa powder
20g Melted butter (salted)
Pinch of salt
dash of milk (optional)
*almond flakes for topping
APAM BALIK (PEANUT CHIPS)
150g Sourdough starter/ discard
50g Cream sweet corn (puree)
10g Sugar
20g Coconut cream
20g Melted butter (salted)
Pinch of salt
*crushed peanuts for topping
PARMESAN CHIPS
150g Sourdough starter/ discard
25g Parmesan cheese
20g Milk
30g Melted butter (salted)
Seasalt flakes
Handful of chopped fresh parsley
SALTED EGG YOLK CHIPS
150g Sourdough starter/ discards
20g Salted egg yolk powder
15g Milk
10g Sugar
20g Melted butter (salted)
1/2 tsp Chicken stock powder (optional)
Fresh curry leaves
Bake at 160C (with fan) @ 15-20 mins
or until dried and crispy
NOTE:
⚠️ 1 recipe yield 2 trays (1-2 bottle of chips)
⚠️ Kindly adjust hydration based on starter/ discard consistency
⚠️ Baking time vary from the thickness of the batter
⚠️ Use NON-STICK baking paper

The Parmesan chips are really good. I made them with Parmigiano-Reggiano and it was so good that I just ate the whole thing out of the oven.

Thanks for sharing this great recipe. I made the brownie chips today. I didn’t have condensed milk so I replaced it with same amount of soy milk and 1 tsp of milk powder. I also added some cacao nips. They are seriously delicious and addictive.

I have tried out the recipe and it tastes great except that I must have not spread it evenly enough and the thicker part tastes like cake(and even though it tastes so nice). I just want to leave the comment here to show my gratefulness for your awesome share!

This is just a tip, the white print for instructions against a white countertop is nearly invisible and way to small. Maybe you could adjust this so it’s easier to read against your backgrounds. Outside that, your recipes are pretty interesting. I will give them a try !

Hi! Yes, sweetened condensed milk. If you're unable to find in your area, you can swap to milk.
Is there any replacement for condense milk?

Take them out of oven 10 min in. Cut in desired sizes put back in for remaining time.

Can I use discard from 50%whole wheat 50% bread flour for this? And my discard is not as thick and bubbly, should I throw it away and wait until my starter mature more?
Yes any discards will do. Adjust the consistency with more water/ flour accordingly.

Hi Liz, yes absolutely fine. Just that I find using condensed milk gives a milky flavour. You can use milk.

Yes, 15 mins is sufficient depending on the oven size and heat.

No, the consistency would be too liquidy
Any different taste by using sourdough starter and discard starter?
It depends on the freshness of your discards. If your discards are kept too long, it might turns sluggish or acidic. Then yes it might taste slightly different. But So far the feedbacks were great and no sour hint at all.
I tried baking but it wasn’t crispy, except for some sides and corners? I used monk fruit sugar, could that be the reason ?
Hi! Most likely your batter consistency is too thin/ watery. You may add some flour and adjust accordingly. Try to achieve a thicker consistency like my video and spread it thinly!

I failed to remove the chips from the non stick parchment paper. Any idea why?
I'm afraid I've not experienced that before unless you're using a parchment paper. You can try using silicon or teflon baking paper next time.

可以用天然酵母代替哦!不需要特地用弃种。
