Chris's favourite cake for a Sunday afternoon with a cup of tea!

  • We don’t do a lot of baking on our channel but I just had to share my recipe for a moist and fruity tea bread, it's one of Chris's absolute favourite cakes and is perfect for a Sunday afternoon with a cup of tea!

    Ingredients:
    150 g (3/4 cup) sultanas
    150 g (3/4 cup) raisins
    300 ml (just over 10 fl oz) hot tea
    250 g (2 cups + 1 tbsp) plain (all-purpose) flour
    2 tsp baking powder
    200 g (1 cup + 2 tbsp) soft light brown sugar
    1 tsp mixed spice
    2 tbsp melted butter
    2 medium eggs
    Instructions
    1. Place the sultanas and raisins in a bowl and pour over the hot tea. Cover and allow to soak up the liquid overnight.
    2. Preheat the oven to 170°C/325°F and line a 2lb loaf tin with baking parchment or a tin liner.
    3. Combine the flour, baking powder, sugar and mixed spice in a mixing bowl. Give it a stir, then mix in the butter and eggs - using a wooden spoon or spatula.
    4. Add in the raisins, sultanas and any liquid left in the bowl. Stir together until everything is thoroughly combined. It will be a very wet dough.
    5. Spoon the wet dough into the lined loaf tin, place in the oven and bake for 1 hour - to 1 hour 15 minutes. You'll know it's done when an inserted skewer comes out clean. If you find that the top of the tea bread is starting to look too dark whilst it's in the oven, you can cover it will foil.
    6. Once cooked, remove from the oven and leave to cool in the tin for 10 minutes.
    7. Then remove from the tin and allow to cool completely on a wire rack before slicing and serving.
    Notes
    This cake should keep for a week or more wrapped in baking parchment and placed in a sealed container at room temperature (in fact, the cake tastes even better after a day or two).
    Mixed Spice is typically a British blend of spices normally consisting of cinnamon, nutmeg, cloves and all spice although other spices can be present depending on the brand. If you’re in the US then it is similar to pumpkin pie spice mix.

    Hi, I live in Canada, our 2lb loaf tin is 9x5 but I know in the UK a 2lb loaf tin is 8x4, which do you use? Love your recipes!L

    I used to serve this when I worked in tea rooms in Wales, called bara brith (speckled bread) it was very popular, in fact a best seller

    Made this last week and it turned out really well so thanks for such a great recipe. Is the oven temp of 170 C for a fan or conventional oven? I had to watch it at the end as you suggested as it was becoming darker than I wanted. Thinking that next time I might reduce to 165 C fan.

      I find my fan oven too hot for most recipes. As a general rule of thumb I reduce the oven temp by 20 degrees Celsius, and sometimes by 30 degrees. I've noticed that the slower baked fruit cakes are particularly sensitive to a too-high temp. I also check the cake well before the full cooking time, eg, at 45 minutes for a 1 hour cake. Often it's done before time, sometimes not.

    I made this yesterday & it was absolutely sensational.....I also made vanilla cream cheese frosting as an extra indulgence & I only used sultanas as that's all I had. A fabulous cake which everyone loved. Thank you so much.

    Since I’m South African, I will use rooibos tea! It has a distinctive, fruity flavour. Haven’t baked in years but I think I’ll start again.

    This Tea loaf was a favourite in our home growing up in Scotland in the 60s, I continue to make it and it's always a big hit with friends and family! I'ts almost like a quick version of a "Clootie Dumpling" :)

    As a Yorkshire man We also do this, butter then we also have cheese with it, Wensleydale, Cheshire or White Stilton.

    My Granny used to make this. I always knew when she set the fruit to soak in tea overnight that we would be making fruit loaf tomorrow. Ahhh happy days.

    this looks so great! i love the idea of softening the raisins with hot tea.......i think Chinese 5 spice might work in this too. i've been adding it to my quick breads lately and love it.......lastly, i'm impressed by that paper liner. i've never seen one here.

    Love me some fruit loaf (any day of the week) I make mine with the addition of dried cranberries. Love it toasted as well - give it a go.

    Thank you very much for this lovely fruit tea loaf recipe, Nicky. It is divine!
    I can see that some contributers have described it as "bara brith" (Welsh for 'speckled bread'), which made me chuckle to myself, as I have been witness to (and, indeed, have taken part in...) many jovial spats about whether bara brith is a bread or a tea loaf cake. I love to eat both, but, personally, I wouldn't describe the 'cake' version as bara brith (there, I've done it...nailed my colours to the mast, and with no regrets!).
    I do have a lovely, traditional bara brith recipe (in which the dried fruit is soaked in tea) , which has been passed down through the generations in our family, from my great, great grandmother, and it is a recipe that I follow faithfully. It is a bread, and tastes lovely buttered and served with a nice cuppa. Can't share it though, or I'd have too much competition in the bara brith section of the next local baking contest. 😘

    I'm so happy that I've found your videos; I'll surely try this cake; it looks very delicious!
    I usually make a similar tea cake with grated coconut which is also very delicious.
    Btw, I think it would be very nice if you can make different type of salads.

    Made one yesterday and the mixture seemed a little dry. Three inches away was the bottle of Capt Morgans Rum (just made Carribbean Coffees). It worked 🙂🙂🙂🙂

    Followed the recipe exactly. Tastes delicious however it is far, far too sweet. Next time I'll use 100g - 150g brown sugar, I'd recommend anyone reading this comment to do so as well.

    Tried this recipe today , took it out after 1 hour and 10 minutes, checked it and found it’s too runny in the middle, put back into oven for another 15 minutes, still runny,why ,anyone can tell me ?

    Ah really nice to see something sweet - looks like a lovely moist cake. Would this cake mix work in a muffin tray to make little individuals?

      I've not tried it but this cake does need quite a long cooking time so might not be best with smaller tins. If you give it a go please do let us know.

    Made this today and it`s really nice, I soaked my fruit in tea and as i had some glace cherries I added them too. Kettle on, get the Lurpak out and .......relax.

    I often take loaf cake recipes and use them in my 3X5 inch loaf pans-one big loaf makes 3 mini ones. I did see the note below about needing a longer bake time. I’ll let you know how they turn out! And yes...I’d love some baking videos, but only if you are up to it. Your savory recipes are lovely so I’m sure your sweet ones will be just as lovely..

    You definitely do not need the sugar as the fruit contains lots of natural sugar!

    I've made this so many times over the years and gradually reduced the sugar until now I don't add any! If i have a very ripe banana that gets added in and sometimes walnuts and some glace cherries(Ilove them!) I make the loaf with the help of my 4 year old granddaughter!!!

    I have made this 3 times in 5 days. I have used light and dark soft sugar, little extra allspice and some cinnamon. each one is moist and delicious. spread with butter on a slice. Yum, Yum.
