For equation 1A + 2B -> C the rate = k[A]¹[B]², but I thought that you had to determine the reaction order experimentally. And that the stoichiometric mole ratios of the equation don't determine the reaction order. Am I right in assuming that the overall reaction order determines the molecularity?

It's applicable to complex reactions.For elementary reactions Stoichiometric coefficients add up to give the order of the reaction.
