stay away from the water all together and use a normal aquarium bottom cover of gravel/sand and use a lizard rock heater instead of a water heater. A towel will do as a top cover to keep the heat in and should work as well. The sand will work as a heat collector and spreader.

Funny thing happened to me recently. I made 10 quart and a half jugs of wine. After a few days I realized that I couldnt smell them like usual. I have them in my 8'×14' bedroom. I like to keep my stash safe. So I looked at them and only 2 had any activity. So Einstien here got the brilliant idea to hook up a heating pad and place a heavy duty trash bag over them. Then whenever I thought about it I would turn it on high. The second day of that I started to smell them working. By the 3rd day the smell had over taken my room. Upon inspection I discovered all of them went crazy foaming out onto my shelving. They turned out okay just not as much product as I had hoped. 😭

@@DoingItCheap - I can already tell you: yes, you can. It’s called step feeding. The yeast might chew through more sugar as it will some times acclimatise to the presence of alcohol. But as long as the wine hasn’t been sitting around for a long time, there’s viable yeast cells in there. Best way to go about it is to make sure you’ve got sediment in there. That sediment doesn’t just contain dead yeast. It also contains live, viable yeast that went dormant.
Even without sediment you can fe-start fermentation as long as alcohol tolerance hasn’t been reached. After all, that’s how champagne is made: wine that’s fermented to dry and gets a precise amount of sugar added to it. Enough to produce more carbon dioxide inside the sealed bottles, but not enough to allow the bottles to explode.
One of my best (hard) ciders is a cherry-berry I fed with just enough sugar after fermentation to make it sparkling. Because I don’t like it completely dry, I also added erythritol as well to sweeten it. Erythritol doesn’t ferment.
I tried your original recipe out of curiosity, although I didn’t make it in the original bottle with the loose-cap method as I’ve got airlocks, a hydrometer, carboys etc. A bit sweet for me but very enjoyable. I only tasted a bit of it because I’m carrying it one step further: steep immature walnuts in it to make French “vin de noix”. It’s pretty close to Port wine. It needs a lot of ageing (make it in May/June, don’t drink any before Christmas, preferably not before it’s a year old). I figured your sweet wine would be the perfect base.

Great experiment Paw Paw. I'm at 6oz for 1 1/2 quarts of juice due to the fact I do not like sweet wine. Question, how would you get a high ABV with say 12 ounces of sugar
and not have a sweet wine? It seems like a complicated procedure. Would wine yeast consume more sugar?

    • @DoingItCheap

I use a similar method I got me a sous vide Emersion cooker it’s like a oversized fish tank heater. I put all my jugs in a rubber made bin than add water and set it to 80 degrees it heats and circulates the water

Happy Thanksgiving Pawpaw! I've been using your method for a few months now just using less sugar since I can't have a lot of sugar. Thanks a lot for the recipe. I have several bottles of Apple wine ready to go, and drinking some now... just trying to not be too hungover tomorrow for turkey day lol. Cheers and God bless.

The experiment was a success...did not expect the swamp but the swamp wine is good!! 👍👍 😊
Told ya those two would be the best! They're both technically dry, but you prefer the one with some residual sweetness and higher alcohol content...naturally, as would I, haha!
I made plenty of cherry mead for the holidays and it's awesome!
Do let us know what your wife thought of the wine and Happy Thanksgiving to you!!

I'd use card board or newspaper over the top next time because it may help control the mold issue better.
