Hi Ibrahim.. I never use almond flour before so Im not sure about the texture. Because we need chewy texture thats why we use tapioca for bakso. The closest one you use is maizena or corn starch/corn flour

Ini mah kuah pho 😅. Kuah bakso tuh harusnya simple, nggak pake banyak rempah2. Bahannya cuma beef bones, tetelan (optional), bawang putih, kemiri, lada putih, garam, penyedap (optional). That’s it. Oh iya, sebaiknya baking soda atau baking powder tidak ditambahkan ke dalam adonan karena itu bikin bakso mengembang tapi menciut waktu dingin. Tips lagi, pemakaian jenis tepung sangat menentukan tekstur bakso. Ada 2 macam tekstur bakso, lembut sama kress. Ada yang lebih suka bakso dengan tekstur lembut kayak yang umumnya dijual abang2 bakso pinggir jalan. Ada juga yang lebib suka bakso dengan tekstur kress kayak Bakso Afung contohnya. Klo mau bakso tekstur lembut, pake tepung tapioka. Klo mau bakso tekstur kress kenyal, pake tepung maizena atau tepung sagu.
