Buffet looks fab. Yum. By the way in Texas Hispanic groceries are where to find your tamarind concentrate. Lots there, even tamarind soda pop. Or unprocessed tamarind.

Food is difficult. You hv to be in fairly good shape, organized and like you said you really hv to love this industry.

I have a suggestion along the lines of the coconut macaroons. I don’t know if they freeze tho: a rice crispy treat. But wait! It’s a salted caramel rice crispy treat. It’s a crowd pleaser even for the snobs because of the sc element and it’s as easy as regular rice crispy treats. It’s always what I bring to events and it’s a huge huge hit. They keep in fridge forever (or almost). Paula deen has a great recipe for these.

Yeah, one of my friends has a catering business and I help him sometimes just for the "fun" of it and it is so much work. Its not uncommon for him, his wife and crew to put in a 16 to 18 hour day the day of the event.

I have to ask, what countries in Asia are your specialty when cooking? Mongolian cooking is nice, as is Myanmar cuisine. Asia is a large continent and the food is not all the same. Let us know what cuisine you are cooking and what country it comes from. Like when you said Thai green curry.
