[Kuzu mochi]
Make kudzu mochi using Yoshino kudzu.
Put 30g of kudzu starch in a bowl.
Add 150ml of water.
Wrap and leave for about 30 minutes.
After 30 minutes, remove the wrap and mix well.
After mixing well, put it in a pot and heat while stirring.
When it becomes transparent, turn off the heat.
Place it on a wet tray.
Add water and let it cool.
Pour the water and cut it into bite-sized pieces.
Sprinkle soybean flour on top and pour brown sugar syrup to finish.
Make the brown sugar syrup.
It is common to make it with 100% brown sugar, but if you want to avoid consuming sugar, it is recommended to mix it with monk fruit.
Put 15 g of brown sugar and 15 g of monk fruit into a pot, add 30 ml of water and heat.
Once boiling, skim off the scum and simmer for about 5 minutes.
This amount will make about two servings.
