I was once making sugar wax and accidentally cooked it too long, and I freaked out thinking I messed up the pan forever because it became completely solid lol. This would have been helpful to know back then. I ended up just soaking the whole pan with water and realized that the sugar mixture was slowly dissolving in the water, so I soaked the pan over and over until it was clean. This looks much easier!

What I do for pots and pans like this, is I run hot water over it first, then fill it with water and dish soap, I turn on the stove to medium high heat & let it boil for roughly 10 minutes and it always gets the job done
ex pastry chef here - i would use up the sugar for something. but if there's nothing to use and still have sugar in your pot that is caramelized, IMMEDIATELY submerge the whole pot with water. if possible, warm 50ish deg Celsius water. leave it there and just clean up the rest... there should be minimal sugars left behind to easily clean.

I like to just fill the whole thing with water and put on a lid then let is simmer. When it cools down it becomes liquid all together so I just dump it down the drain. That way u don’t get extra utensils dirty and it doesn’t stick in places. Note for everyone that’s slow I put a lot of water so it becomes very liquidy it just becomes like a very thin syrup, it doesn’t crystallize. I’ve had it stay for days on my stove before it doesn’t do that. I also use my sink and hot water often so nothing has a chance to crystalize even if it could.

Even easier: just put water hot or cold in the pan. The water must be in contact with all of the cooked sugar and wait. It will come right away after a while. Caramel melts with humidity

This is extra work lol After making tanghulu, I put very warm water and dish soap in the pan/ pot and let it sit in the sink for a while until majority of the sugar is completely melted and dissolved into the water. If there are extra bits of sugar crystals in the pot/pan, scrub it with very warm water and the small sugar crystals should dissolve. No need to use the stove for this either.
For more sustainable options, leave it soaked in water overnight instead or put it in the sink and let water drip on it whenever you use the sink or wash your dishes above it.
After taking it off from pan, let it crystalized once again. The leftovers sugar can be eaten like a candy or lolipop. But maybe it's just me, because some people don't like the taste of a simple crystalized sugar without anything else 😅
A small idea. If you are done making tanghulu and still have leftover melted sugar try to make sugar lolipops. Like use some stick, chopsticks or whatever save and put in on a parchment paper and pour some sugar on top and let it cool down. Not sure if it will work i have not tried it but in my family we used to do lolipops like these all the times

After you get the big clump off the bottom put some aluminum foil on top and it’ll melt the sugar on the sides too(from a baking and pastry major that fücked up a lot in sugars and making caramel)
You can also add a small amount of corn syrup Or honey in your sugar syrup, it wont stick to the pan and if it goes solid, you can soak in water and it melts

I would not heat up solid sugar because it could explode in your face causing serious burns. Instead soak the pan in warm water for several minutes and the sugar will eventually dissolve.

Keep this in mind. if u want to clean salts (examples: from ironing thing, the thing that boils water, bathrooms etc) always use vinegar and boiling water. if you want to clean basically 90% of whatever is solid, always use boiling water and the appropriate chemical trhat u usually use. Moral of the story, always boil water

tip: make sure to use enough water so the sugar dissolves COMPLETELY, otherwise it will harden after being poured out and will screw up your drain
I made Tanghulu at home, I just soaked the pan in water til the sugar kind of melted, then I rinsed it and it was all good

You can also just soak it in cold water too. Water is a universal solvent. Doesn't matter if it's hot or cold. 😊
