    An English friend gave my late mother a recipe for her rice pudding many years ago. Put enough raw rice in a baking dish to cover the bottom. Sprinkle with 3 tablespoons of sugar and 1/2 teaspoon of salt. Fill the dish with milk to the 1/2 to 3/4 level. Dot with 1 tablespoon of butter and sprinkle liberally with nutmeg. Bake at 350f for 1 to 1 1/2 hours. Super simple and good, too!

    Hi Kevin! One hour after I watch this video I decided to make the rice pudding which is probably my favorite dessert of all time. I just had to cook some rice and put everything together! I have to say that it came out absolutely delicious and creamy, I could not stop eating it and one of the best rice pudding I ever tasted. I also added some fresh nutmeg thanks to Ralph! Thank you again for a great and yet simple recipe!

    Growing up in New Jersey, a state noted for their diners, a diner just wasn't a diner without Cherry Jell-O and/or baked rice pudding for dessert. So ubiquitous were they in fact that most places didn't even need to print them on their menus.

      Hi James! So many great diners in NJ - and such great food! No doubt rice pudding was a common item - along with the Jell-O! We had a place here that offered a choice of rice or tapioca pudding...was hard to decide! Thanks!

    I'll have to try this recipe. The baked rice pudding looks delicious!
    My German grandmother made rice pudding using a double boiler. She didn't put raisens in it. She would serve a separate dish of steamed prunes if anyone wanted to add them.
    Grandmother's homemade apple pie and rice pudding were my favorite deserts.
    Her apple pies were made with the apples from her apple tree out in the backyard.
    I miss those special days from my youth.

    I'm here because I didn't get my Mother's rice pudding recipe before she passed. I loved it. She was a Southern (US) lady who would make it much as you did with leftover rice already cooked ... and always added raisins. I do remember she'd put some dabs of butter on the top which added another level of tastiness. I can use your recipe to recreate Mother's rice pudding. I think she usually just put vanilla for flavoring and/or maybe a little nutmeg. With the instructions you've provided I think I can now make this memorable and favorite dish of mine.     When you come in and start writing on the chalk board it reminds me of teachers writing assignments in high school like "read Chapters 1 trough 6 of Julius Cesar, write a report, DUE MONDAY" and that was on a Friday. Any way, I digress. I like rice pudding or any warm pudding. don't give me instant. We used to eat bread pudding, warm, made with milk, nutmeg, and raisans. Please let us know what music you are playing and show us your stereo if you are using vinyl.

      Hi Fred! Funny you should mention the chalkboard - I've been teaching remotely for months now and miss writing on the board - but I'd never give my students five chapters to read! LOL!       @@cavalcadeoffood I said you were a teacher. You just act like one. About that assignment, I graduated in 1971. They worked us back then . The first day of Latin class my teacher wrote our assignment in LATIN. We had to translate it ourselves to see what we were supposed to do. In cursive, too. Now a lot of kids can't read it. For a time they quit teaching it here in Florida. Stay warm. Thanks.

    She also made tapioca for. Breakfast. We ate it warm

    I'm Mexican, and we have something similar called arroz con leche. I was blown away by how similar they are! We don't bake it, or use eggs, but we end up with a nice little warm mug of comforting ricey goodness anyways. Love this video!

I have one piece which is my Mom’s loaf pan that has the same Blue Heaven design and I always use it for meatloaf and quick breads!     In the fall, I like to puree persimmon for something similar. So nice with cinnamon and all of those other flavors.

    Mom , who was Welsh, made a version of this dish. I was always under the impression it was a British creation, but perhaps not. Hers was baked. I never tried it . . . .for some reason, it never appealed to me in my younger years, but that was my loss. Maybe I should have. I also didn't realize it's essentially egg custard, which I love , . . . with rice.
    You appear to take much more care of it here, and I should try to make it.

      Hi Jake! I'm not certain of the origin of rice pudding. It seems to exist in quite a few cultures in different forms. If your mom baked her rice pudding, it may have been some variation on this recipe. Hope you give it a try! Thanks!

    Yes!!! Temper your eggs!!! I didn’t and I basically got “sweet stir fry” because my eggs scrambled 😁. Lesson learned. Still ate it 🙏🏻🙏🏻🙏🏻

    Kevin, I tried this yesterday and really enjoyed this wonderful, old time dessert. This is something my grandmother used to make and I had completely forgotten about it! I took Ralph’s advice and added a pinch of nutmeg to mine. Just one thing... your video mentions 1 tsp. Cinnamon but your printed recipe states 1/2 tsp. Additionally, your video mentions 1/8 tsp salt but the printed recipe omits it, so you probably want to make these corrections. By the way, next time I make it, I’m going to plump the raisins first before adding them to the liquid asI found the pudding slightly dry. I think that having the raisins plumped first will avoid them soaking up the milk, therefore keeping it a bit creamier.

    Kevin, I love this rice pudding recipe! Actually rice triples in volume when being cooked. I have a recipe for baked rice pudding that started out with raw rice and has no eggs and comes out custardy. It has a long bake time, so I make it only in the winter.

    You should try the traditional rice pudding of Portugal, you wouldn't have any other more 😁😁😁😂😂💖💖 Arroz doce or sweet 🍚 rice , Arroz is rice and doce is sweet, in Portugal we have every year at Christmas 🎄 time our famous rice pudding, we use butter eggs and sugar in plenty quantities in all desserts and cakes 😂😂👏👏👏

    Cavalcade of Food-Hi Kevin and Ralph! Guys, does this Rice Pudding ever bring back childhood memories! In the south, Rice Pudding was seasoned with nutmeg in my home. And yes, it had raisins in it too! Hey Kevin-I was ready for you this time! While you were eating that pudding, I had made myself a nice hot bowl of oatmeal with raisins, dates, and walnuts! I used whole milk, real salted butter, some brown sugar, and I added some extra raisins. So while you ate-I ate! I have told you, Kevin, many, many times that you make the food you cook look so good and I always get so hungry that I could just reach right through the screen and get a bite-well, tonight I ate with you! Ralph, was the Rice Pudding as great as it looked? I would so very much like to eat something that Kevin has cooked! Say Kevin, you said your grandmother was Maltese. Did she by any chance ever live in Detroit on Junction Street, that you know of? Just curious because I visited Detroit as a teenager and there was a Maltese family who lived beside the family that we were visiting. Now, wouldn't it be wild if this old southern born and raised woman had actually met your family during her only ever trip to Detroit!! Great video again as always, guys.       Hi Princess Skate!! I have to say that oatmeal you made sure sounds yummy! You made it just how I would - and with raisins!! I'm sure when you made the rice pudding the nutmeg really gave it a nice warm flavor. My Maltese grandparents lived in Detroit, but not on Junction. They lived a little east of there closer to downtown Detroit in a neighborhood called "Corktown" where there was a concentration of Maltese people living. That really would have been something if you had met my family!! Hope you are well and having a mild winter - we got a lot of snow up here so far, hoping the worst of winter is over, but March is always a mystery!! Take good care!!
