    True story. I was a young man of 27 years back in 1979. Times were tough, I was rather desperate and I was searching for a job so searched the want ads and I applied for a job being a home caretaker for a well to do man and his significant other at a very nice Hunts Point WA, home. I got the job and they discovered I had some cooking skills as well. It happens that they were regular customers at the Canlis restaurant and they had the recipe for the Canlis salad that was given to them by Chris Canlis (they said). Anyway, they taught me to make the salad and they requested it with nearly every dinner 5 days/week served in high sided wooden bowls that they found in Hawaii. I worked for them 1 year and must have made (at least) 200 Canlis salads for them. I got so I could make them blindfolded. The only thing is they did not request nor want the cherry tomatoes or mint. Everything else was the same. Of course I ate plenty of the salad myself and found it was the best salad I had ever had. 40 years later, now an old married man of 69 years, I still make the Canlis salad and enjoy it just as much as the first time I made it. One other tidbit. My boss and his gal took me to the Canlis restaurant as a special treat and I enjoyed it very much and still tell people about it. It was so nice. We were met at the front door by a doorman, valet parked the car, we were waited on by a very attentive waitress and a terrific wine steward who just seemed to know when to refill the glass. The steak, baked potato and salad were first class. Everything was perfect. When we got up to leave the valet had the car ready for us outside the front door, no waiting. It was a terrific and delightful experience that I will never forget. Canlis is first class.

    December 2006: I was senior executive aide with a then Seattle-based internationally recognized 'Big Bank.' Canlis' Penthouse was the venue for our holiday party, hosting international guests. The Best.
    Because of the many details I was organizing to ensure a memorable guest experience, I was loaded with related logistics (e.g., town cars, people, last-minute 'are-you-kidding-me' requests, etc.). To ensure our event was successful, Chris Canlls, himself, was my 'Personal Assistant' for the evening. There's more . . .
    My lodging that evening was at the Fairmont Seattle, which provided car service for corporate accounts (to-and-from). Upon the conclusion of our event, I'd learned my return car service wasn't available. Mr. and Mrs. Chris Canlis offered to personally accompany me in their private car to ensure my safe return. I still have Chris Canlis' personal business card today.
