  • The ultimate love child of street food and comfort food. If you like pho, this is very close to it but with Thai flavours! Well balanced flavours with lots of textures going on...topped with crispy garlic...this ain't your mama's chicken noodle soup! Haha, that is definitely true for my mama, although my GRANDmama would make something like this often. This is probably the easiest noodle soup you could make at home, especially once you've mastered the art of Thai style chicken stock from last week's video! (See link to that below)

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

      Very familiar type of noodle soup. In Teochew dialect, guay tiow specifically refers to the fresh wide rice noodles. The type you use in pad see ew but narrower and thinner. I will also suggest that tang chye be added to the stock - it enhances the soup base very well and not just as condiment. My personal preference is also using shallot oil and sprinkling over the fried shallots at serving.

    Watching this again in 2018, and I nearly cried when you say “flash back of home” cus I’m also far away from home and I miss Thai street food so much. I love how you describe the dish so well, I can just taste it by just listening to you. I’m so proud of you, P’pai. You’re such a legend.

    Don't know how I lived without this for so long! I make dog food for 2 of our dogs th-cam.com/users/postUgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg (we have 5!) and it is so much quicker in this. Love having the inner pot stainless so I can use my immersion blender right in it without worrying about scratching. It makes potatoes great and fast! Still working on the vegetables, first time came out great, second time I did different ones and they were a little too mushy. Just need to adjust the time. I highly recommend this pot!!!

    Hello, Pailin! Thank you for sharing this recipe . I must say it is better to make my own Chicken Stock rather than Using the store-bough one. I tried this recipe a few hours ago and it turned out good. I used Chinese cabbage (cai xin) , bean sprouts and Chicken breast.

    I tried this at a street vendor in Thailand. It's super delicious and addicting. I must say it taste nothing like Pho soup. It has a unique deep flavour taste, very well seasoning broth.

      1. clean cabbages and dry for 1 day.
      2. chop in pieces and mix with chopped garlic and salt.
      3. massage, squeeze, and knead the cabbage till it releases moisture and reduces in size.
      4. transfer the massaged cabbage to a clean glass jar or clay pot.
      5. store the jar at room temperature for 1-2 weeks.

      Why don't you just substitute everything with vegetables then? You can use vegetarian broth and mushrooms for the "meat".
