But he did this awesome knife restoration while sitting his ass on the couch!
When working on a Japanese style knife with a flat side and a beveled side, the thing to keep in mind is that there really isn't a flat side. The urasuki & uraoshi combine to make the blade cut more effectively. The urasuki is a slight concavity in the "flat" side of the blade that reduces friction and helps keep food slices from sticking to the knife.
The concavity on the "flat" side also aids in sharpening.

Awesome. My first restoration took more than 6 months. Every square cm I got right just made the rest look even worse. It takes on a life of its own. Then the sharpening - something else that can take a lifetime to master. Restoring a Yanagi-ba now; two months in, fingers raw. I thank the universe for every knife that is saved. Thank you for sharing!

Awesome dude your videos are what actually inspired me to get off my couch and start restoring old tools. I didn't have any tools when I started and I still only use hand tools on my kitchen table. Thanks for all the inspiration.

Unbelievable! I just clicked on youtube after spending an hour on my Deba and this is recommended. I feels. My knife was used as a garden trowel for years, handle full of crap, tip of the blade snapped and edge saw toothed. It's taken me 4 years to get it looking and working like a Deba again with sand paper and stones. I did not use power tools to avoid heat. Yeah, the steel is really hard, but beautiful. Any hoo, 8000 grit for the win and cool video, thank you.

I’m currently in high school and I just started my own knife restoration project because I’ve been interested in doing something like this for a while. This is how most people get started knife making. Rehandling an old knife or making a handle for a blade they bought from a knife making supply company like Jantz or USA knife.
Generally, you don't shape the handle until after you have it glued to the tang. If you make the handle oversized, you don't run into the problem of the hole being off center.

Keeping the art of using hand tools and not depending on modern tech for things like this is awesome. Never know, one day those modern tools might be all gone, or not work anymore.

A 4 in 1 wood file makes handle shaping a bit easier. One of these days I'm going to make a Japanese style chefs knife full tang Osage orange. I made a bowie with that handle and Love the waxy feel of that wood. I only make hidden tang knives with bolsters front and aft. I peen the tang on the pommel bolster. Living in the Appalachian mountain area we are blessed by many hardwoods. We are mostly poor. I started with no power tools and a home made forge.

If you just polished the backside, it's a job well done. In case you completely flattened the concave back, then you took the last bit of life that knife had. The concave backside is crucial for Japanese one sided knives.

From this little line cook's perspective, I would say a Deba is basically a multi-use butcher's knife. Imagine a meat cleaver shaped like a kitchen knife. They're sturdy and built with that little stout groove on them to handle thick fish bones. They all taper off at the tip, however, so you can use them for small fish as well.
So badass you restored an old school one though, in case you read this.

Hi, great first try. For what I've seen in hundreds of knife making vids, whenever they make a hidden tang handle, the drill the tang hole, attach it to the knife and mask the blade. Then they shape the handle profile so they make sure the handle is centered to the edge. That's how they get it dead centered in case the holes weren't properly made. :)

Good job, looks cool and also the handle. The colors blend together. On centering the hole,try a ice pick or a center punch.so the mark would be even all the way around.

It is supposed to be concave on the back side. It is a single bevel fish knife. It is very important for this type of knife.

I like mixing epoxy in those little bathroom paper cups. In your case you didn't use enough to bother with one, but if you ever mix a lot it helps.
