I love chicken liver. Now I have my children loving it too . My 16 year old son really likes liver and onions but is in love with fried chicken liver. When I make whole chicken I have to fight my son for the liver lol 😆
If you want to add the flour to the pan like that, you must consistently stir while you’re putting the flour in the pan otherwise you can mix flour in the water before you poured in the pan. This will resolve your clumping problem.
When adding the flour, be sure there is no water in the pan - just grease or oil. Any water will cause the flour to clump. Once the clumps have formed, they are hard to get rid of, as you know. At least that's what I think I've observed.
Either add flour to fat (oil/butter/lard) and make a roux before adding the broth or mix the flour with cold broth and then heat it. If you add the flour to boiling water, you basically just made some very small dumplings.

Put the flour in that and then take a spoon and grind out any lumps against the mesh. The flour comes right through the screen strainer perfectly and “powdery” with no lumps at all. It takes maybe 10 seconds to do that, too ! Very quick process doing that

growing up in Milwaukee on 21st, Grandma you thought would be cooking cube steak and onions because yes, we love this meal, but like you said, one could easily be fooled by 'liver & onions" with a quick taste. lol

My hubby loves the Liver and Onions and it smells so good when he makes it... its the fact I know what the liver does in the body and then I smell the raw when he's prepping and its the metallic blood smell that deadens the desire to try it. But he loves it. I do my grandma's pepper steak with what cubed steaks or I should say a version of hers because you know when you consider yourself a real home cook... you don't take other folks recipes, you borrow their base elements and then you add your OWN stank on it. LOL
