  • Tocino or pork tocino is one of the popular pork dish for Pinoys but this dish, or maybe just the name was one of the Spanish influence that we inherited. The word tocino means bacon in Spanish.

    Ingredients
    1/2 kilo pork shoulder or kasim, slice into ¼ inch thick
    1/2 cup brown sugar
    1/4 tsp. of red food coloring or annatto powder
    2 Tbsp. soy sauce
    2 cloves garlic, minced
    1/8 cup pineapple juice (optional)
    1/2 tsp. salt

    This recipe is legit! It does taste like tocino. I fried 1 piece of meat after 3 hours of marination just to find out how it tastes like. It was so good! I'm glad I found your channel. I actually made a mistake and put 1/4 cup of pineapple juice instead of 1/8 and it turned out fine. I also used almost a tablespoon of garlic powder instead of actual garlic cloves because I felt lazy to dice garlic and my family likes lots of garlic flavour in our food. I also added a bit more salt. It was perfect!!! Tocino is very expensive in Filipino stores here in UK but thanks to your recipe I can just make our own! We cannot wait so we're gonna have some of the tocino for breakfast tomorrow with just 15+ hours of marinade and we'll eat the rest in 2 days time to test the difference. Thank you so much!

    I made this recipe with chicken, & it was masarap!!! If you’re not a pork eater, just use a little less brown sugar, & resist the urge to use the red food coloring.🤦🏻‍♀️😂 Thanks so much for posting this! Can’t wait to make it again!😋🤤

    I need to try this now.. one of my American workmate asked me if I can make tocino for him.. he tried it before when he met one of his Filipina friend.. but she moved to other state.. and now he misses to eat tocino again 😂😂😂

    @ 3:57 water can be better than oil ? maybe ? pork has a lotta it’s fine natural oil I would haff to keep adding water it evaporates so I keep adding it takes a while making it tender genius invention has to be one of thee best of ALL has to💋🇬🇺🙏🏽

    My mom would have me cook the pork in a pan with water. Once the water evaporated then I all I had to do was fry it.

      Yes that is the traditional way of cooking tocino specially many years ago because the way people make it is using thick slices of pork with fat like a sliced pork belly or pork chops. You have to boil it first in small amount of water until it evaporates.

      Sa chiller muna para ma cure yung karne tapos pwede na sa freezer para hindi umasim. Nag feferment kasi tocino pag hindi naka freezer.

      Yes po di muna sa freezer dapat sa fridge lang. Pag na cure na pwede na i freezer. 😁

      Actually even the commercial tocino won't last long if you will not keep it in the freezer. If you will just put it in the ref it will ferment because of the sugar even though it has preservatives like salitre. If you will put it in the freezer then it will last for months.

      Mas ok at least overnight. Pag half an hour lang walang lasa yung karne at hindi pa sya na cure.

    Pag pinatagal po ba freezer aalisin n ung pinang marinate o stay lng ung marinate sauce s pork?this is impt kc,lalo na ng sabaw ung marinate sauce, di po b aalisin hyan lng n ganun? O aalisin tas illgy s plastic sealed ung pork tocino

      Ok naman po na hayaan n lng yung marinade sa pork. Medyo hassle lng konti pag ipiprito na kasi kailangan pa i drain ulit. Kaya mas ok siguro alisin n lng yung marinade.😁

      Vinegar is used in making pork tapa but never tried it in tocino. I think orange juice might work in pork tocino. :)

      Sorry for the late reply ngayon ko lang nakita comment mo. Anyway siguro 1 week pwede tumagal sa chiller pero pag sa freezer mga ilang buwan din tatagal.

    It’s better to simmer the pork in 1/2 c water first to have a tender meat.

      Kailanga kasi na may juice or acid para ma cure yung tocino. Yung tocino mix powder sa mama sita may citric acid yata. Basahin mo na lang ingredients nun.

      As long as it is pure pineapple juice you can use it. Usually it is canned pineapple juice.

      @@ellaflower786 Yun kasi yung lumang style ng pagluluto ng tocino nilalagyan ng tubig. Yun na rin kasi nakagawian para maluto ng maigi yung tocino. Kasi yung tocino noon makakapal ang hiwa at may kasamang taba at balat. Meron pa sigurong ganoon sa mga palengke yung parang nilagyan ng dyobos o yung pangkulay ng damit pero food coloring yun. Yung nauso na yung mga pampangas best na tocino, maninipis kasi hiwa kaya diretso na prito ginagawa. Kahit basahin mo instruction sa likod ng balot prito agad wala ng tubig.

Sobrang sarap po ng recipe nyo as in! Ipapatikim ko din po ito sa mga pinsan ko. bukas po susubukan ko na iprito na agad tutal manipis lang ang paghiwa ko. Salamat po ulit

      Yes it's ok not to use any food coloring. But you can use annato seed powder (atchuete powder) for a substitute. 😁
