This is my understanding,im bengali.im just about to cook this so please excuse typos,im in a rush! Bangladeshi Chicken pilau rice For the curried chicken Ghee 3 tbspn cooking oil 3 tblspn chicken about 800g-1 kg (i used 3 breasts) cut into bite size pieces onions about 2 medium finely chopped garlic whole - peeled and turned to paste (can be bought as a paste) ginger 1 and half inch piece -peeled and turned to paste (can be bought as a paste) ground fennel 1 tspn (optional) Green chillies 4 (optional) low fat plain greek yoghurt. 2 tablspn Whole spices 1 • bay leaf 4 • cinnamon sticks 3-4 • cardamon pods 5-7 whole spices 2 • 1 anise (optional) • 1 black cardamon • whole black peppercorns about 10 • whole cloves about 6 ground spices • 1 and half tspn ground cumin • 1 and half tspn ground fennel • (top: soak 4 cups of basmati rice in water for cooking later) Method: In a pot over medium heat add 3 tablespn of ghee and 3 tblspn of cooking oil add whole spices 1 to the pot and wait for aroma to come out Add garlic and ginger stir then add onions and salt to tatse,and lower heat till onions are soft (abt 5 mins) add whole spices 2,then stir add chicken and stir on low heat and simmer for 5 mins add yoghurt and stir. add green chillies and simmer for 5 then take off heat and leave aside. Rice Ghee 1 tblspn 2 Onions chopped finely 6 cloves garlic and 1 inch piece ginger ginger chopped finely or paste whole spices cinnamon sticks 2 Bay leaf 3 cardamon 6 whole black pepper 5-7 whole cumin seeds rosewater (optional) Method preheat over to about 160 degrees fan and boil about 1 and half litres water heat a pot and add ghee,then add whole cumin seeds and whole spices and cook till the smell comes out add onions,garlic and ginger and stir on medium heat then add drained rice and salt to the pot and stir add curried chicken and stir add boiled water to the ration of rice cup of rice 1: 1 and 1/2 cups boiling water and allow to boil,then turn off heat,add a sheet of foil over the top of pot,add a lid to cover and put in the oven for about half hour or till rice is cooked . serve with salad

Method
preheat over to about 160 degrees fan and boil about 1 and half litres water
heat a pot and add ghee,then add whole cumin seeds and whole spices and cook till the smell comes out
add onions,garlic and ginger and stir on medium heat
then add drained rice and salt to the pot and stir
add curried chicken and stir
add boiled water to the ration of rice cup of rice 1: 1 and 1/2 cups boiling water and allow to boil,then turn off heat,add a sheet of foil over the top of pot,add a lid to cover and put in the oven for about half hour or till rice is cooked

Hello sister, I don't remember my mother using yoghurt. Is it traditional for Sylhetis to use youghurt?
Joolsner. No sister it isn’t traditional but I used it. If you want you should use it but you don’t have to use it..it’s up to you .
