Ingredients: - 1Kg Basmati rice - 1kg meat - 1/4 cup cooking oil - 2tsp Ghee - 2 bay leaf/Tejpata - 4 cinnamon stick - 2tbs garlic and ginger paste - 3 big size whole onion - 4 green chillies - Garam/whole spices ( 1nutmeg, 1 mace spice, 1 star aniseed, 1 black cardamom, 10/12 green cardamom, 1 pinch (27-28) back pepper, 4/5 cloves) - 1/2 cup yougurt - 1tsp cumin powder - 1tsp fennel seeds powder - 1/2tsp mace powder - less than 1/2tsp nutmeg powder. - Salt to taste. Instructions: Step1: Meat bhuna:- - Add ghee and cooking oil. Then add bay leafs, cinnamon sticks and ginger/garlic paste and stir them well. Later add onions, salt as per your own taste, and keep stirring. Cover the for 2/3 min, after 3 minutes add another tsp of ginger/garlic paste and stir well and cover again for another 3/4 minutes. After 4 minutes its time to add meats and cover for 2/3 minutes. After 3 minutes add garam masala and stir and cover 2/3 minutes. After 3 minutes add yogurt and add all the powder ingredients listed above and stir, now put you gas on a low flame and cover for 4/5 minutes. After 4 minutes add little water to not burn and then cover again for 5-6 minutes and cook in low gas flame. After 6 minutes add the green chillies and cook for 2-3 minutes. When its done keep the meat a side. Step 2: Rice cooking:- - Wash and soak the rice for 10 minutes and then strain the water from rice. - Take a pot to boil the rice. Add water and add whole spices ( green cardamom, bay leaf, cinnamon stick, and fennel seeds into the water and bring to a boil, then keep the water a side. Step 3: Akhni - Take another pot to make akhni and add 2 tsp ghee and melt them. Add some shahi jeera/ black cumin. Add 1tbsp garlic and 2tbsp ginger and 1 and half cup onion, then keep stir until they become golden brown and keep some onion a side for later use . Now add salt for rice and add 2tbsp oil. Now add some cloves, 1 star aniseed, 1 black cardamom. After onions are brown add rice and fry them well. Once the rice are fried well now add the meat Korma and mix the rice and meat well. (For 4 cup rice I used 5 cups of water, however it depends on thw rice how much water do you need, so keep that in mind). When adding water the gas flame has to be on high and the water has to be boiled hot and after adding water put the flame in medium and stir and cook for 2 minutes by covering. After water is soaked add about 1 tsp rose water and then test if the rice is cooked. If the is cooked you do not need to add anymore water, otherwise add some water to cook the rice. Now cover with kitchen foil and put the rice pot in a preheated oven for about 30-40 minutes and. If you do not have over you can put the pot on a preheated pan in a low flame to cook the rice.
