Crema montada de café es una de esas especialidades que te resistes a creer que es tan fácil de hacer por lo espectacular que parece. Sólo tiene un secreto y este es el siguiente... únicamente puedes montar esta crema si utilizas café soluble liofilizado. Da lo mismo el tipo de marca que utilices, siempre lo conseguirás montar, eso sí utiliza el agua lo más fria que puedas conseguir. ¿Cúal es la mágia? Simplemente la Liofilización... esa congelación seca en diminutos cristales del café que en contacto con los cristales de azucar y el agua muy fría, es lo que obra la mágia.
