SNS Travel Kettle! Whole Picanha!

Did this Picanha indirect on the Slow ’N Sear Travel Kettle. Turned out amazing!
• Started with a nice Picanha from Willauer Farms in Bucks County, PA www.buckscount...
• Trimmed some fat and kept a nice ¼” layer of fat cap.
• Seasoned with just kosher salt for about 3 hours in advance.
• Placed on the Travel Kettle on the indirect side.
• Was shooting for a grill temp of 250F degrees and it was running a little high around 300.
• Once it got close to 80F degrees on the Meater+, we checked it to see how it looked.
• When it got to about 112F we pulled this off and opened the vents.
• Did some searing to finish this off and make it look nice.
Summary: These choice picanha steaks from Costco were extremely tender and juicy! Would do this again since it turned out great.
