  • Raspberry and White Chocolate Muffins Recipe
    Ingredients:
    2 eggs
    124 ml milk
    1 1/2 tsp vanilla essence
    121g melted butter
    185g granulated sugar
    258g plain flour
    2 tsp baking powder
    1/8 tsp baking soda
    Pinch of salt
    88g white chocolate
    190g fresh raspberries
    For the crumble:
    33g melted butter
    33g granulated sugar
    75g plain flour
    Method:
    To a bowl add the eggs, milk and vanilla essence
    Whisk until combined
    Add the melted butter and sugar
    Whisk until smooth
    To another bowl add the flour, baking powder, baking soda, salt and white chocolate
    Mix until combined then add to the wet mixture
    Cover the raspberries in 2 tbsp of plain flour to prevent them from sinking when baked
    Add the raspberries to the mixture and mix until combined
    Add the mixture to the muffin liners and top of with the crumble
    Bake at gas mark 3 for 30 mins
    For the crumble:
    in a bowl add the butter, sugar and flour
    Mix until it forms a crumble texture
