Pontiff vs Friede is the best. Not just well balanced but also cinematic, it looks choreographed! 6:06 you can see them avoiding attacks 4 times in a roll!
He doesn't even stagger easy, midirs fire just does absolutely massive poise damage. It's like the rock lizards where it's supposed to knock the player down.
And if his attacks and AI were actually programmed relative to an enemies size. With him fighting the player and maybe Siegward he always hits close to his feet, sometimes even uses the flame-stomp which only works against players close to him. If he would stop using the same useless slam he would win far more easily.
Tbh, he is a giant. Being tall is pretty neat, but it has its drawbacks on your knees, so I'm not surprised he kept staggering. Dude is like, what, 15 or 18 meters tall? The real heroes of the story are his knees.
Poise damage, specific attacks (Worm from egg head, kicks, punches..) have unique alterations that make poise less effective. Andre has a special boxer punch that deals more poise damage than the egg head by 1 point.
The drama of yuria of londor vs blackflame friede really cannot be overstated. The fact that it would not be too far from the lore also is cool as hell. Edit: matched only by andre vs the mushroom.
I love that most of these fights look like rough, gritty, bloody battles to the absolute death and then you've got Friede and Sulyvahn straight up dancing like their lives depend on it.
Yuria vs Friede was really cool, as Yuria acts just like a player. Dragonslayer vs Pursuer, Friede vs Sulyvahn and cathedral vs lothric knight were kinda funny. Their AI is very similar, so they attack and dodge at similar timings, making things looks choreographed/synchronized. Midir vs Yhorm was excruciating to watch. Both are such damage sponges that they take forever to die if their weakness are not exploited.
A lot of enemies actually are like players in the Soulsborne games, why those AI battles work so well, they have the same targeting and move sets mostly in a way. I not know where and who stated it once, tho. But why playing as enemies also works so well, kinda. Somewhere, someone stated it I think in either a comment I did read or one TH-camr mentioned it, but was awhile ago sadly, so not can give a source.

BonfireVN is a Yhorm fanboy. Probably why he always records fights from NG+* when Yhorm's health is in bug territory. Needless to say in the actual balanced game (NG) Midir ruins Yhorm.

The reason Yhorm becomes competitive versus end-game bosses is because Fromsoftware classes Yhorm as a critical weakness boss, such as Curse-Rotted Greatwood and Wolnir. Both Yhorm and Aldrich (arrows must be dodged) are necessarily gimmick bosses, since their sequencing is flexible; they are unscaled. Their 'strengths'--health and damage respectively--are set to be so high that the player does not misinterpret the requirements of progression, i.e. grinding levels. Also note that Wolnir is the only other boss in the game with a health-pool (~40,000) which is comparable to Yhorm's (~60,000) by NG+7. Wolnir may also be defeated without exploiting his weakness (bracelets).

Everyone talking about pontiff and I'm just loving the fight between shira and zoey the dodges felt on point and the the miracle and pyromancy livened the fight up.
Shira takes way too long to fire, that was an easy victory if she would just let the damn arrows fly.

Andre being able to beat Havel with full armor, his shield and weapon, with no armor and just his fists proves he may be the strongest being in all of dark souls
