Well this is a first for me. Before, a dispenser would only spit out the buckets, not actually spit out a water source. That is awesome. I've been trying to figure things out on how to get this to work for bedrock users, so I created a new comment. Go check it out and see if that solution works for you.
Hello, we're in 1.21.1JAVA I've done everything like you for the "farm" with water and when I press the button there's no water in the middle + and on the borders.. Also It doesn't go to the end. Only way to fix it is to add 4 water source.. Did you used a mod or smth ?
BEDROCK USERS, on Switch: It has taken me a while to figure out exactly why that set up does not work. I play on the Nintendo Switch version, aka Bedrock. (I'll mention crop block, it's actually called the farmland block, y'all know what I mean) *Do not use redstone. Even though a button can activate the redstone, the dispenser will sit and do nothing. I have heard redstone had a wonky update where somethings don't work as they should. This seems to be one of them! *Dispenser does need all 9 buckets filled. I tried just having 1 water bucket in the center just to see, and 1 in each spot per try, but it really does need all 9. So in survival that's quite a bit of iron! *Dispenser can NOT be turned off by hitting the button again, that just uses another bucket of water. This is actually my first time I've ever seen water come out from a dispenser, on Bedrock, and not just spit out the buckets. That is awesome!! *Do not place a source of water below the level the crop blocks are at, it will not be recognized as a water source. *Do not plant a crop in front of the dispensers. You'll need to place a block in front of the dispenser in order to stop the water flow since the block space in front of the dispenser acts as the water source. Otherwise do have the dispenser raised 1 block higher than the crop blocks, but you'll still need to place a block in front of the dispenser to stop the water flow. 1 dispenser can take care of a crop field (when the dispenser is 1 block above the crops) the size of an area that is 7x6. I think I counted that right. But the issue is about half of the crop blocks will just turn to dirt. A water source block that is below a crop block does not get recognized that a source of water is near.
OH, 1 more thing, a button can be placed directly on top of the dispenser, on the backside, or on a block just above or below the dispenser. And as I mentioned, hitting the button a second time does not stop the water flow. Now if only the redstone issue can be solved, that'd be great so I could do more than 1 field at the same time.
Dude, if you are using a realistic mod, can you tell me the name of the mod? I've been looking for the name of the mod for 2 days and I can't find it and I wasn't sure if you would answer, but I wanted to ask you as a last resort.
That's clever using the dispenser with water to harvest crops

Forgive my ignorance, but why are torches placed under a layer of sod where the house is being built?
To help prevent mobs from spawning.
amazing
