- A wine-loving friend of our often-videoed women's group member.
I asked her what her favorite dishes go with the wines she chooses and put them together!
The lineup includes dishes that appeared at the girls' party and appetizers and snacks that I usually make that I think will stick with wine lovers.
I would be happy if you could take a look at it as a reference for dishes for drinking at home☺.

👨🍳Recipe Notes
*Seasonings such as pre-cooking are not included in the amount.
■Italian grilled eggplant
2 eggplants
1 clove garlic
1 red pepper
A pinch of salt
Sauce
4 slices of bacon
2 tablespoons walnuts
A pinch each of salt and white pepper
4 small tomatoes

1 tablespoon capers
1 tablespoon lemon juice
1/2 teaspoon lemon zest

■Squid and orange fennel salad
1 squid
1 orange
1 fennel plant
2 teaspoons white wine vinegar
Olive oil to taste
salt to taste

■Potato Stacked Gratin
2 potatoes
Salt to taste
A dash of pepper
garlic to taste
Butter to taste
As much Parmigiano-Reggiano as you like
3 tablespoons heavy cream
As much shredded cheese as you like

■Gizzard and Mushroom Confit
300 g gizzards
6-8 mushrooms
3 cloves garlic
1 red pepper
2 sprigs rosemary
1 bay leaf
100 ml thick sesame oil
100 ml olive oil
1 tablespoon olive oil for marinade
2 teaspoons pepper
1 teaspoon salt
*Lemon wedges for garnish when eating
*Refrigerate: about 2 weeks (while soaked in oil)

■Harissa Mapo Tofu
1 tofu (300g)
150 g ground pork
4 shiitake mushrooms
A pinch of pak choi (to taste)
1 clove garlic
1 1/2 teaspoons harissa
1 teaspoon cardamom powder
A pinch of pepper
100 ml chicken broth
1 teaspoon fish sauce
1 tablespoon potato starch dissolved in water
A dash of salad oil
A pinch of salt
A pinch of pepper

こちらの砂肝のレシピの砂肝の重量は、銀皮を取るなど、処理の後の重量ですか?取る前ですか?細かくてアレなんですけど、塩加減に影響出そうなので、教えて頂けますと有難いです。
