These are pretty tangy, but I didn’t eat a huge number of them (yet)! I would assume that pickling them is much like pickling green tomatoes. Unripe tomatoes contain tomatine and solanine which are both known to cause gastric distress, but when brined or pickled they do not. The process eliminates the astringency, so I’m hoping it’s the same effect with these little Mustang grape olives!!
Yes! But they are also very tangy, mostly because these grapes are very sour to begin with. I’m sure a lot of the final flavor will depend on the amount of vinegar (or possibly if you just use a salt a water brine!) and your particular ingredients. I think you could use almost any olive recipe on line. I think I’m going to try to make some that could taste like okra pickles next year!!
Got tons of these right now. Hope they are not too far along and will check for the seeds to be able to try this. Can't wait!!!

Wow. Same here. No dewberries but the ranch is full of mustang grapes. So no vinegar? And no tummy ache eating green mustangs?

Where are you located?? Wondering how far and wide the dewberry dearth is this year. I’m in central Texas. Sure missing them this year!!

The good news is .. the “old timers” say a year like this is usually followed by a year (or two) with a bumper crop!! Fingers crossed for 2024!
