You should of used a walking foot. If you had, you would of managed to keep the stripes running in a true line instead of being stretched out. Apart from that, if it had been a plain jumper, it would of looked great.
"Distracting" is the politically correct and polite way of saying... DAMNED ANNOYING! I'd much rather listen to the sewing machine with perhaps the odd comment from the sewer but, if you MUST have "music" for some reason unknown to me, MAKE IT MUSIC... not that damn tuneless computer junk on a loop.

What a great idea! Would the sweater be as sturdy if I just sewed in the jersey pieces but didn't put in a zipper?
Yes it will be, the jersey is just for that! You can also add fusible stretchable interfacing if you have it or use a jacket zipper.

I like your idea to change a pullover sweater into a cardigan--Can you use grosgrain ribbon instead of jersey fabric?
You could just need to keep it so straight as not to buckle. I would use a stretchable ribbon it would be easier to apply.

Does the sweater have to be bigger? Or can it be a slighty smaller pull over sweater and add the zipper or even buttons?
I have an old wool sweater that I love but can no longer wear. The arthritis in my shoulder is such that I can’t pull it over my head anymore 😢

Why do you need the strips of jersey?
It is easier if you turn the garment inside out. Good idea though.
