THE VERY BEST EXPLANATION OVERALL (far better than Mr. Gordon Ramsay or others) Very professional, logical and very very helpful: a) starting from choosing an incredient (what and why), b) explaining what will be used: going through the full list of the ingredients, explaining which ingredients is the star of the dish and which one for flavour only; c) and finally explaining the very technique: what to do, why to do, how to do and what NOT to do;
Exactly!! and better than Thomas Keller's TH-cam on gnocchi as well. More complete and better presented. No pretense or overselling. Anyone who cooks cannot help but love this and be inspired.
Agreed - very simple, straightforward explanation of technique and ingredients. An excellent example of what a highest-quality TH-cam channel is all about.
Arvid Grenman agreed. This is Italian cooking passed on generation to generation. Not to knock Ramsey but he's not an authentic Italian chef. He cooks well but in this demo is the soul of Italian cooking.
Agreed. So many gnocchi recipes Give a weight Or measure range such as one and a 1/2 To 2 cups of flour . Gianni explains what the texture is supposed to be for your end product. Finally I think I may be able to master the elusive Gnocchi. On my last attempt my partner called them "yuckies" . Never again!!!
How real is this guy!! He reminds me of my uncle and his fishing buddies from the 60's. And you know he absolutely knows his preparations inside and out. Simple ingredients carefully selected, pure flavors and freshly made- it is what Italian cooking is all about. God Bless you Gianni!!!
Thank you so much! I'm from Mexico City and I wanted to tell you that you are an excellent cook, I was looking for a gnocchi recipe because tomorrow is my husband's birthday. This is the first time i`m going to be cooking gnocchi and you make it look so easy and explain it really good.
Gianni- Thank you for the inspiration, I finally tackled this recipe and the results were outstanding! I decided to wrap the russet potatoes in foil and roast them in the oven thinking this would keep the moisture level down to a minimum and therefore I could use less flour. Since I didn't have a potato ricer or a food mill, I used my box grater on the potatoes - not as fast as a ricer but it worked fine. I also wanted to get some color so I made three batches - one with only the potato, another with a roasted beet added and the last batch with a handful of raw spinach added. I pulsed the additional ingredient in a food processor a couple of times and added it to the riced potato before incorporating the egg, which I separated and used only the yolk, again thinking this would reduce the moisture and lessen the need for flour. For the sauces, I made the creamy Gorgonzola (I added some sautéed thinly sliced cremini mushroom caps) and it was my favorite. As you had experienced, I too couldn't find any decent tomatoes, so in place of your other two sauces, I made a brown butter and thyme sauce. The cooked gnocchi were light pillows of deliciousness and in the colors of the Italian flag; I call this ‘Gnocchi Tricolori’. Thanks again for sharing your expertise and this great recipe.
Hiya Gianni~.i'm so glad to have found You,there is so little that is truely "authentic" anymore.I grew up with a few Italian friends, having had the best of food while often being in their homes i recall the "Italian" that was so much a part of my childhood & i really do miss it.I look forward to looking at Your clips & trying each recipe that i would enjoy.I love Your personality and the way You talk. Thanks 4 such a nice experience. Many blessings Gianni !
Bellissimo! grazie Gianni! I'm not Italian, but I love Italian food. I live just south of San Fransisco. Will definitely try these beautiful gnocchi recipes.
When I was a boy my grandmother tried to teach me how to make gnocchi. Course I didn't pay much attention thinking should be around forever. I have tried several times and just can't get the texture right. Love your video , so descriptive . I am really excited to try this again. I have mastered the art of pesto, If I can master Gnocchi I can die a happy man! Thanks for such a great video
I enjoyed the "pre-cooking" segment of the video, where you take the viewer along to shop for ingredients. To an amateur like myself, it was very helpful and informative. The ease with which you made three seperate sauces from scratch has encouraged me to prepare my own sauces at home for my next meal. Thanks, Gianni!
This has got to be the ULTIMATE way to prepare & serve Gnocchi! Being able to 'only' watch ... was the most delightful frustration in a long time ;o) Thank you for sharing your expertise so generously!
I would totally buy season DVDs of a TV show if you were doing one! I loved this. Subscribed. Super informative without making me feel like a damn idiot. lol Gratzie!
Eating these right now with Pizzaiola sauce. Wonderful and so simple to do too. Amazing how rich a simple tomato sauce can be with just reduction and some herbs. Perfect with creamy potato gnocchi. Mine are unfortunately not as firm as in video, so I'll be more careful with ingredients next time. But still tastes good. Thanks for the videos, Gianni, this is a great channel! I'll definitely try more of your recipes.
I made the gnocchi with the dolce gorgonzola yesterday. Infused the cream with a piece of chopped ginger, and fresh rosemary and a hint of nutmeg then strained it out before melting the cheese into it. YOU MUST TRY it this way. Delicious! Will be trying the Trapanese next. Thank you Gianni!
In my country, Australia they have a series called Masterchef in which they once made gnocchi. The sauce was a bland butter with sage and other forgettables where they had the tenacity to call it "beautiful". Yet these sauces have elegant simplicity while achieving great taste. The world these days... Great video and something I HAVE tried!
Woah. I haven't seen cooking come alive like that through a screen in a long, long while. I felt the recipe spark on a sensual level. Thank you for sharing this. You've gained a subscriber.

Hi, I have this pile of russets and wanted to do something wit them before they grew roots and go to my compost pile. Soo -Fluffy gnocchi! Im loving your unpretentious and straight forward approach, videos, and how you emphasize not to over work the flour glutens. So here I go. I have one question: how long ahead of time can I make the raw gnocchis before boiling them? I want to have tonight but wanted to get started earlier, but not freeze them. So what's that give or take time window? Thanks

I just ordered a gnocchi board and potato ricer. I've been dying to try to make these. I'm going to do it just as you did with these three sauces. Thanks!
Thank you for the speedy reply! Ohh perect, this is gunna be soo good!!! Im making the tomato pesto with toasted almonds w fresh tomatoes and basil from my garden! Ill let you know how it turns out! Thanks so much, you made my day.. BTW... Im in lovely Fremont!
Ciao Gianni, they turned out perfect! I'm so happy (and stuffed!) to have learned this dish after so long. Dont ask why this is a basic one. Still to do it right is important. I sent a ink to your FBwith a gallery of photos from this. Yeah I got flour all over my camera phone.. haha worth it!
Very light and fluffy. It was hard to roll across the fork. Maybe just a little more flour? Gotta get me a (ricer) I needed to add more salt to the dough or the water I boiled them in. I had used my San Marzanos earlier last week but made a great tomato sauce anyway! I enjoyed them, for my first try so They'll only get better with practice! Thanks so much for sharing your recipes and processes!!!
I haven't made sfinci but I've been meaning to for a while. They're a favorite of my Sicilian friends and are a favorite this time of the year to celebrate the feast of St. Joseph. My roots are in Campania and I have recipes for zeppole and zeppole di San Giuseppe on the website. I'll let you know how my sfinci turns out.
Whadda ya gonna do? I always do my own dishes. Once I was clearing the dishes from the table where 6 of us just finished the last course. I wanted to wash some to make more room in the kitchen. A friend walked in. "Why not put them in the dishwasher." "Never use it. I always wash them by hand." "How long have you been off your meds" he spurted as he returned to the dining room table.
Friends loved it! It turns out quite well, though I need a little more practice. Im sure the second one would be better from the first. Thank you very much.
Okay. Thank you. I will try that next time and I will have to invest in a potato ricer. Thanks for the tips :) I hope the second time I make them it turns out better. Do you think if they are frozen and I cook them the texture will turn out the same?
Once in NY's Little Italy I tried one of the BEST dishes that I've tasted in my life (liked it so much that returned the following day to eat it again!), they were Gnocchi in a tomato sauce. Delicious! I am going to give these recipes a try for sure. Hope they taste as good as those ones I tried just a year before the Twin Towers fell. :(
Hello! Awesome job! I am having trouble getting my gnocchi firm enough, believe it or not. It sounds like the opposite of what many recipes warn about making them too dense. Mine come out so soft that they are almost mushy. Also, I love the sound of the pesto trapanese sauce but can I cook it briefly or at least add some hot water from the pot? Thank you!
I love San Francisco! I was born in Hanford, but my family has a lot of history in San Francisco. My grandfather spent a majority of his life in San Francisco.
hi,, I am new,,, nice To see u here,,,Italian/ American is a very handsome combination,,, I Am so happy to see u here cooking,, keep it up, love from Philippines
I was looking into making gnocchi and I found this video. I haven't made any yet, but I really want to try it with the gorgonzola. I love cheese, especially blue cheese and goat cheese.
Really, really nice work! Been checking a few more of your vids out and now I'm trying to catch your dialect..."trow in some more flour", "add dat to da pan" etc. Gonna have fun building these dishes. Off to watch a few more. Them more until I have the whole channel committed to memory. hah Go, Gianni, go!
Ciao. I score the gnocchi for 2 reasons. My finger pressure creates a concave indentation. The thinner shape helps the gnocchi cook through. Those ridges help sauce adhere to the pasta. Gnocchi really are not that difficult to make and they are well worth the effort.

I just made the three sauces with my gnocchi (which I make the same way) and MAN O MAN are you on point with this. Talk about DELICIOSO!!!!!

I might end up doing this next time I have an abundance of potatoes.
Fantastic!!!! Gonna try this recipe also. Thanks for sharing. God bless
Wonderful food. I love gnocchi. My great grandfather was from Milan, Italy. He was a mason and worked w stone.
I Love the calm voice

Now I'm very hungry! Thanks. I like your bit of a New York accent as well....
@stufado1
I'm hooked on Sicilian sea salt for everyday use. I use the sale marino grosso (coarse) and grind in it my salt mill to the texture I need. Currently I'm using SoSalt from the sea near Trapani and Marsala. I also have some sea salt I got from the salt pans at Mohta in this same area. It's really special and I only use it as a finishing salt.
Finally the gnocchis turned out alright!
This time the I let the potatoes dry out before egg to it and it turned out pretty ok (though not the best.
Thanks for the video!
Its great for expert cooks and novices like me too!
Gianni, I LOVE these videos! I'm just upset that I'm not in that kitchen enjoying those dishes with you!
I did them with pesto mmm delicious thanks for the advice
it's interesting to hear you sound so much like the men in my family back in the North East despite being from California. Very informative video. it was like learning from a relative. i think that gives me confidence to try this on my own.

Yeah, I crushed a ricer or 2 in my time. I bought a sturdy heavy plastic Kuhn-Ricon replacement that's indestructible. Actually I bought 2. I gave one away at a gnocchi demonstration I did in New York City a while ago. I love mine.
Keep on cooking.

Do you think if they are frozen and I cook them the texture will turn out the same?
loved the gorgonzola cream sauce. trying that tomorrow!
i just love this recipe ! I'm making gnocchi con pizzaiola sauce ! Thanks ! You rock !!
Thank you Gianni. I have always wanted to know how to make high quality gnocchi by hand.
I wish my Italian was a good as your English. Bravo!
Nice job. This guy does it right.
Mesmerizing from beginning to end!
love your videos, will try this one. thanks a bunch
Wonderful technique Gianni. Mine are always too soft & gluggy to freeze. Can I freeze the uncooked gnocci of your recipe?
Best gnocchi video I have watched. Straightforward, no shit.
2020.12.27 thank you for this amazing recipe🙏
Thank you!
Thanks for the video, my next challenge! I'm busy with my bread making at the moment......lol. Rob
Get busy. These gnocchi are delicious. Buon appetito!
lots of help I am just getting pumped for my culinary school final

Ciao Amir.
Buona fortuna! Good luck with your finals. Keep on cooking.

All of them.... so simple as you presented them. My favourite was the blue cheese and cream though... gorgeous
Neil Watcyn-Palmer Gotta say the gorgonzola cream sauce is my favorite too. And it's so simple.

Really, really nice work!
Been checking a few more of your vids out and now I'm trying to catch your dialect..."trow in some more flour", "add dat to da pan" etc. Gonna have fun building these dishes.
Off to watch a few more. Them more until I have the whole channel committed to memory. hah
Go, Gianni, go!

Ciao.
I score the gnocchi for 2 reasons. My finger pressure creates a concave indentation. The thinner shape helps the gnocchi cook through. Those ridges help sauce adhere to the pasta.
Gnocchi really are not that difficult to make and they are well worth the effort.
Fuggeaboutit! Beautiful pillows of potato pasta with 3 amazing sauces! A meal fit for a king.
Bravooooooooo la mia figlia adora li gnocchi 😍😍😍😘 grazie
Yes, you can use a grater. Spread the grated potatoes out on a baking sheet to let them dry out a bit before making the gnocchi dough.
