I’m experimenting with levels of sugar to water to berries, and have found that having a high berry content and 1:1/2 sugar to water makes the ferment go strong and fast! Thanks for showing us this method, as it is the easiest and possibly tastiest way to make fermented drinks. I only discovered I needed so few ingredients recently, always thinking I needed a preferment or kefir. Anyway we love your method and hope to pass it on!
I really like that he mentioned that stirring is recommended to prevent mold issues and to mix in oxygen into the water which the yeasts like. Although this also confuses me. Mold also likes oxygen ..

Like anything it is a matter of getting familiar with it and you'll then be able to ID and spot it everywhere. BBerries---mama called them choke cherries and said that they were poison.
