You made me discover Oyster mushrooms and now I can't get enough!! I literally buy them weekly! the texture is oh so so good and there are so many possibilities of taste and seasonings to add! thanks!
That looks incredible! That would be great paired with mushroom steak, mashed potatoes, and a vegan cookie topped with vegan icecream and chocolate sauce!
This is brilliant - don't be shy with the seasonings! I've just ordered your book Chef D! I made this today with what I had in my fridge - broc/cauli/oyster mushrooms/onions and I added the roasted potatoes from your previous recipe. You have opened up a completely new cooking paradigm - minimal dishes and prep work, maximal taste and presentation. We eat with our eyes, nose, ears, teeth and then our taste buds....your dishes look delicious, smell wonderful, sizzle as they roast and crunch in the mouth before they explode with flavors....simply brilliant! PS: I'm in the US, so I had to make my own Mango Masala with these Indian spices from the Indian store: Amchoor/Hing/Haldi/Roasted Jeera (with main 1/3 Amchoor; 1/3 Haldi; 1/3 Jeera and a pinch of Hing....not sure if it's close to your Mango Masala, but it the blend was palatable ;)

This looks lovely as always! Yep, this is how I'm making my veg next week. All for me, thanks. Also - and I find it endearing because I know it's a chef thing - whenever you say "just a touch/a little bit of oil, not too much" and throw a few glugs in there, it makes me smile and think "LIES!" lol
LOL...yeah, maybe not as precise as some folks would like, but honestly...part of the fun of cooking is loosening things up and learning how to cook with feeling rather than getting too caught up in exact measurements. Sure, you don't want to put a cup of salt in something when it only needs a teaspoon, but it rarely makes a difference if you're a glug or a pinch one way or the other. I empathize with you, but I do a couple of things - I use an oil spritzer so instead of pouring the oil as a seasoned chef with a controlled hand, I put my oil in one of those atomizer thingamebobs ....I'm a post-heart attack patient whose been told to do the NO OIL diet..that's impossible...but this spritzer method fools my palate and transfers the heat and spices to the food well enough. Second thing I do is plenty of cardio every day.... :) Please let me know if you have any workarounds too...always looking for oil-free /oil cutting ideas. Great honest comment!

Can I make this the day before, then bring it up to room temperature and toss it into the oven for the last fifteen minutes the day of my bbq? This channel is excellent. This looks so good that I’m feeling sad because all I have left from my last shopping trip is frozen veggies. Please, please, please! make some videos and recipes on how to cook with frozen veggies. I know is not the same as fresh but they are a saver specially when finding fresh produce is not that easy.
Maybe I missed it but did he ever roast the broccoli? I have roasted them before at 475 with a pinch of sugar until slightly charred. I was curious to see how he did it.
I use a spritzer ( an atomizer spray bottle) to spray the oil on the food...better than the PAM oil in a can baking spray that you can't control since it's under high pressure. If you can't get the atomizer spray cans in the UK just brush the oil on with a basting brush. And as a heart patient, I also exercise 45 minutes EVERYDAY! Hope this helps.
You could maybe chargrill the veg on a cast iron skillet? Need barely any oil to get a good char & the flavour's great! ETA: I mean a ridged skillet, not a regular pan
@@SooperToober Will do! Did some cauliflower this way last night which came out great. You can stretch any oil used to coat the veg by adding a little acid so it's almost a dressing/marinade. Thinned down tahini might be a good sub to avoid oil completely & get your healthy fats in.... Not tried it though so don't quote me!
I have company coming over at 11am next Sunday for a day at the pool and want to serve these grilled vegetables. Problem is there is no way I can prep and cook all these vegs and set up everything in the couple of morning hours before they arrive. Can I prep and grill all the vegetables the day before and keep them overnight in the fridge and then pop them in the oven for a few minutes the morning of the party?
So is red wine being used or "cooking wine"? Is there a difference? I dunno🤪 I been racking my head over this trying to get everything I need to create this.

There are some great youtube videos on how to grow them at home...this is kinda tongue in cheek...but I'm rather looking into this myself cos Chef D has got me so excited about eating mushrooms for the first time in my life!

However, I was annoyed today on my trip to a Tesco Extra to find that some of the stuff you use isn't available in the store ie: extra firm Tofu. How can I make up your recipes if I can't get the ingredients from the store you work for? I notice you put oil on every separate veg then oiled the pan. Very greasy.

Have you tried trumpet mushrooms? The stalks have a wonderfully firm texture.
They don't have them in my Tesco superstore.
