Way back when (1989, in fact) I had a dish like this in Beijing. They called it something that sounded like "swan meow." We ordered it everywhere we ate, it was so darned good.
Few tweaks I made after making this a few times: - added splash of both mirin and sake to the pork marinade - used a whole (small) can of jalepenos from mexico that also had some carrot in them and I found to be much crunchier than any of the jarred jalepenos ive bought in the past - put roasted red skinned peanuts on top for extra crunch and i felt the flavours worked well
I find that when I add heat(temp) to the pickled jalapeños, it seems to add heat(spice) to them/the dish - or it's my imagination as I can't handle a lot of spicy heat.
Sure. Or pickled Thai bird chilies which we have a surplus of in our studio. But most people can get ahold of pickled jalapeños and they’re underrated!

My aunt who we visited in Kentucky always had pickled canned green beans in her cellar. They were absolutely delicious. I think she also pickled corn

Pickled jalapeños are not that spicy tho. They add the pickley flavor but not much spice. How about adding pickled serranos peppers?
