The human brain is amazing. Very good at detecting patterns. These guys have years of training and experience. The blindfold ability is a byproduct of that experience and training.

Hxg5 and from my understanding that open file is gonna be too dangerous to defend unless you play it precisely even so it'll weaken the kingside pretty badly.

Black is lost if he takes bishop but why exactly is slightly complicated as it's always the case with advanced poles. Basically you combo H-line battery threat with another threat couple moves in a row till black collapses. That how it works in general for advanced poles. You may be missing hxg4 Nh7 Ne5 Qxg5 Qf3 Nf6 Rh8+! Kxh8 Nf7+ Kg8 Nxg5 tactic as Black would be indeed piece up if not that in this line. It's not only line, there are many more but none give black any chances. At best they will give up back knight and 2 pawns and have king run to queenside while white is grabbing material. However you are right and fishing with advanced variant is always risky as you need to be precise and confident as at first glance it may look like there is not enough for a piece. You often need to reevaluate piece sack if not taken which is also challenging psychologically and time-wisely. Fishing is like playing game of chicken in chess. Till it works it works and once it doesn't you have to retreat with worse position or piece is taken and you lose ^^ It's showcase of who has bigger balls. If you take right away of course you have no balls at all and you lose. That how it works.

It always has to be that construction with king already castled into that side but rarely may happen also on queenside. There are various forms though and that one Naka made is particularly good because it pins Queen. Fishing pole rarely threatens anything at the beginning, it's aim is to paralize opponent pieces but to make it happen you also have to invest piece activity. So it's game who can handle part of forces paralized better. Here black queen is immoblized to protect against doubling pawns in front of king so equasion comes in favor of white. That's why black can't really play that game for long time. Best for black is actually c5 dxc5 Bxc5 Ne5 Qc7 after which white gets "punishment" with Bxf6 gxf6. Hence it's "safe" fishing as usually opponent with best play untangles himself enough that fishermen has to make consession. However not everybody plays best moves in which case pole is very rewarding. On higher levels it's often dubious but from time to time still used, on lower levels it's extremely good though. If this wasn't Naka i'm pretty sure dude would snap grab that bishop. Not many lower rated players fully understand threats and is calm enough to be playing like nothing happened on other areas of the board. They almost always try to either somehow grab a piece or break the status quo. In this case though you must break it because as black you invest considerably more piece activity than white so you cannot take normal steps against pole. Hence why it's "safe". Win-win situation and if you would look into engine i'm pretty convinced that after h6 h4 is one of 2 best moves. There are also some funny constructions - i know 2 openings for that but possibly might be more - with prepared pole setup waiting only for 0-0 to put piece on g4 where white best play is to postpone castling and where aim is to force black into castle 0-0 first as than fishing pole no longer exists. Black of course tries to refuse. It's like playing chicken game in advance xd Quite funny in my opinion and may lead to absolute bananas positions. Once I remember i tried setting it up this way and I finally ended up playing Ke7 10 to 15 moves later with white response Ke2 xd And than it became immediately tactical clownfiesta. Fun stuff but unfortunately white usually gets on top in those.
