    I made this, divided by half to make a little pie, the other half I put in a silicone mold with portioned sections to eat like fat bombs, taking out of the freezer when I need . It's delicious, I'll be making this again and again!

    Just made this for my stepson's birthday dessert. We are pie people around here, not so much with the cake. Psh! Cake, schmake, this is a delicious pie, by any standard, keto or not. I can tell and I haven't even had a whole piece yet, haha.
    I've made hundreds of pies over the years. I know a good recipe when I find it. Especially factoring in the difficulty-to-deliciousness ratio, with this pie being very easy *and* very delicious, this is a good 'un! Bonus points for being pretty, as well. 🥰👍
    For my taste, I wanted a bit of salt. I usually do want some salt in sweet things to enhance/balance the sweet flavor; I added a quarter+ tsp to the filling. My peanut butter is not very salty; that was probably a factor there. I topped with melted Lilly's chocolate just as Carolyn did, plus added a few decorative chunks of a Lilly's Salted Caramel Dark Chocolate bar.
    Hubby and I have just finished licking all the spoons and bowls and the pie is in the freezer. I am wondering if it is best to leave frozen right up till serving? Or better to take out for a bit first?

    Baking dowel…. Great for cookies instead of smashing before you bake, put them in the oven and after five minutes pull them out and gently push down with baking dowel. If you don’t want it to stick you can lightly place a little square parchment paper over each cookie as you press

      Two days ahead is fine. i wouldn't add any topping until you serve. And cover it up tightly so it doesn't take on any flavors from other foods in your fridge.

      The freezing is only to set it quickly. Definitely store in the fridge after that!

    Still learning here. Why cant we use allulose for the filling? Will it now harden at all? I just tasted allulose and I love it. I tried on a few of your maple syrup scones (the glaze/icing). It's so good! Thank you for this amazing recipe!

      I have been doing keto baking for 2 years now and I've never touched swerve I do not like it. I will use aullose or a monk fruit/aullose blend. When I make this peanut butter recipe, I will replacing the swerve with one of those sweeteners. If you're afraid of things not hardening up or setting up you can always Bloom some gelatin and add it to it, that's what I do.

      Allulose affects a lot of people negatively.

      You can use allulose for this recipe, it just may take longer to firm up.

    Does that peanut butter have palm oil? Most peanut butters these days seem to include palm oil. The one I use, Crazy Richard's, doesn't have palm oil. It's just peanuts.

    2 to 3 hours is fine. I always make them with gelatin. But I've never tried it this way.

      Please read the recipe notes for the classic dairy version. I was pretty clear in the blog post as well.

    Swerve sweetener causes diarrhea. What other options are there. I use stevia and monk fruit.

    Ok, it’s delicious. But…Massive disappointment when I bought that specific brand of peanut butter and opened up up only to find a giant oil slick on top. I had to mix it all in and made a huge mess and was annoyed af the whole time. The texture sucked. I just don’t believe there’s a natural, sugar free creamy peanut butter that doesn’t separate. It’s a lie!

      Here’s a tip, though. Scoop everything into a blender and blend it up and put it back in the jar.

      @@MsAnneThrope I feel ya! The no stir version of this is ON POINT! But it's harder to find. I go to my local WF and there will be a ton of the regular but hardly any of the no stir.

    I love peanut butter anything! But we should be careful with eating too much peanut butter because of the Omega 6. We need a good balance of the Omegas and if we eat too much of the foods that contain Omega 6, it will throw off that balance, which then will cause inflammation.
